00:01Hi, I'm Yuto from Suzashi and today I'm going to show you how to make 3 delicious sauces to
00:06serve with your Japanese Tonka support cutlets. Let's get started. I'm going to start with the
00:15most basic one. So grab a bowl and add 2 tablespoons of Worcestershire sauce, 1 tablespoon of soy
00:22sauce, 1 tablespoon of ketchup, a generous pinch of light brown sugar, and a tablespoon
00:30of sesame seeds. Mix all those together until combined. This is a pretty standard tonkatsu
00:37sauce that heavily relies on the flavour of Worcestershire sauce. Next, I'm going to show
00:43you how to make a rich misokatsu sauce. This one needs to be cooked down so grab a small
00:49saucepan and add 100ml of dashi stock, 1.5 tablespoon of mirin, 1 tablespoon of sake, 2 tablespoons
00:59of light brown sugar, 1 teaspoon of soy sauce, and finally 2 tablespoons of red hatjo miso.
01:07This miso is made purely with soy beans and salt. It doesn't contain any other grains so
01:12it's naturally vegan and gluten free. Anyway, bring that to a boil over medium heat
01:19and stir until it becomes smooth. Misokatsu made with this sauce is actually a regional
01:24dish from Aichi Prefecture where I grew up. I might be biased but it's so good and I
01:31seriously recommend giving it a try. Okay, once it starts to boil, reduce the heat
01:36and simmer for about 10 minutes or until it has thickened. Stay occasionally and be careful
01:43for splashing. When it looks like this, turn off the heat and stir in half a tablespoon of
01:49sesame seeds.
01:54Finally, I'm going to make a toasty and nutty sesame sauce. First, we need to toast 2 tablespoons
02:01of sesame seeds in a dry pan over medium heat. Make sure to keep moving the seeds to prevent
02:08burning. Toasting sesame seeds helps bring out their flavour, so this sauce is quite intensely
02:14sesame flavoured. When they're nice and golden, transfer them to a mortar and grind them into
02:21a powder. For this small amount, I find grinding them by hand more convenient, but for a larger
02:28batch, you might want to use a food processor. Once it's more or less smooth, transfer it to
02:36a bowl and add 2 teaspoons of soy sauce, 2 teaspoons of washer sauce, 1 teaspoon of sugar, 2 and
02:45a half
02:45tablespoons of water and 1 tablespoon of ketchup. Mix those together until smooth and that's it.
