The Ultimate Desi Feast: Restaurant-Style Dal, Chicken Curry & Fusion Dal-Murgh
​1. Perfect Yellow Dal (Tadka Dal)
​Ingredients: 1 cup split moong/masoor dal, 1/2 tsp turmeric, salt, 3 cups water. For Tadka: 2 tbsp ghee, 1 tsp cumin, 3 cloves minced garlic, 2 dried red chilies, 1/2 tsp Kashmiri red chili powder.
​Method: Boil the dal with water, salt, and turmeric until creamy. In a small pan, heat ghee. Add cumin and garlic; fry until golden brown. Remove from heat, add chili powder (to keep color vibrant), and pour over the cooked dal. Cover immediately for 2 minutes to trap the aroma.
​2. Restaurant-Style Red Chicken Curry
​Ingredients: 500g chicken, 2 onions (finely chopped), 1 tbsp ginger-garlic paste, 2 tomatoes (pureed), 1/2 cup yogurt, 1/2 cup oil, 1 tsp red chili powder, 1/2 tsp turmeric, 1 tsp coriander powder, 1/2 tsp garam masala, fresh coriander.
​Method: Fry onions in oil until dark golden. Add ginger-garlic paste and chicken; sauté until the chicken turns white. Add tomato puree and powdered spices. Cook until oil separates. Whisk the yogurt and add it to the pan. Cook on low heat until the chicken is tender and the curry is thick, red, and aromatic. Finish with garam masala and fresh coriander.
​3. The "Royal Dal-Murgh Fusion"
​Ingredients: Prepared Yellow Dal, prepared Chicken Curry, 1/4 cup thick yogurt, fresh green chilies.
​Method: Combine the cooked dal and chicken curry in a large pot. Add 1/4 cup of whisked yogurt to balance the flavors. Simmer on low heat for 8–10 minutes, allowing the lentils to absorb the richness of the chicken juices. Serve hot.
​4. Perfect Steamed White Rice & Soft Roti
​Steamed Rice: Wash 1 cup basmati rice. Boil in 2 cups of water with 1/2 tsp salt and 1 tsp oil. Once the water level reaches the rice, cover tightly and cook on the lowest heat for 10–12 minutes.
​Soft Roti: Mix 2 cups wheat flour with a pinch of salt and water to form a soft, smooth dough. Let it rest for 20 minutes. Roll out thin circles and cook on a hot flat tawa until golden brown spots appear on both sides.
