This dish usually uses salmon fillets coated with a simple glaze made from miso paste, soy sauce, mirin, sake, and a little sugar or honey for balance. 00:04pan-fried salmon with stick-tip miso glaze.
00:07Let's get started.
00:08So first grab a bowl and add 1 tbsp of yellow miso paste, 1 tbsp of sake, 1 tsp of
00:19grey
00:19garlic, 1 tsp of soy sauce, and 1 tsp of light brown sugar.
00:25Then mix it all together until smooth.
00:27I recommend yellow miso for this as red can be too rich and white can be too sweet.
00:34Ok, next let's prepare the salmon.
00:37Start preheating your pan on medium-high and while you wait, get your salmon fillet and
00:43pat them dry with kitchen paper to remove any excess moisture.
00:53Sprinkle both sides with a pinch of salt and then coat with potato starch.
01:05If you've watched some of my other videos, you might know that I love this technique of
01:09coating meat and fish with starch.
01:12Not only does it improve the surface texture, but it also thickens the sauce and helps it
01:17stick better so it's a win-win all around.
01:20I use about half a tbsp of starch for each fillet.
01:26When your pan is nice and hot, add a general drizzle of oil and place the salmon with the
01:33skin side facing down.
01:36We're just gonna fry it up for 2 minutes on each side.
01:39However, this is just an estimate.
01:42Salmon in Japan is usually quite thinly cut, so if your salmon is thicker, you would need
01:48to increase the cooking time.
01:49The internal temperature should reach 52 degrees Celsius.
01:54If you want to add some vegetables, I'd recommend something like asparagus or shishito peppers.
01:59You can just fry them in the pan with the salmon.
02:02Ok, once the salmon is cooked through, turn off the heat and pour the miso sauce into the pan.
02:13Carefully move the salmon around until it's coated all over.
02:17We turn off the heat here because miso is quite prone to burning, so just let it thicken using
02:24the residual heat.
02:25When the salmon is fully coated, take the pan off the heat and let's serve.
02:31Add a sprinkle of chopped green onions and serve.
02:35Just so you know, like most Japanese dishes, this miso salmon is meant to be enjoyed with
02:40plain white rice, so make sure to pair this with plain white rice, otherwise it will be
02:45too rich and salty.
