02:35to make another territory crack under pressure more on that in a minute okay as you can all see
02:43tonight is your first mystery box challenge I may not be able to tell you what's under there
02:49but I can tell you this humble ingredient is one of the most universal proteins in the world okay
02:59it's time to find out what's under those mystery boxes oh boy on the count of three one two three

04:31behind a great hollandaise and this is where the work starts water gentle simmer now we get a balloon
04:37whisk we're starting to cook the eggs slowly now the reason why I chose this big balloon whisk is
04:42because it makes it easy to incorporate air there you could do this with a small whisk it'll just take
04:46you three times longer definitely a workout whistle one hand and then just slowly drip clarified butter
04:52in too fast you're gonna break it too slow you can over whip it I'm taking it off the heat
04:58now because
04:58if it gets too hot don't scramble exactly that we'll scramble the eggs it looks easy but you gotta know
05:04what
05:04do you want that really nice creamy texture fresh lemon juice in salt it will touch a pepper and that
05:13is ready to go now right poaching the eggs white vinegar protects the egg continue with a little vortex
05:21and then just gently drop in these beautiful eggs and cook these eggs for 90 seconds and then gently lift
05:29and into your ice bath now I said I'm doing a take on a Scottish Benedict I've got a lovely
