Cheat’s tonkotsu ramen is a quick ramen recipe that creates a creamy tonkotsu-style broth without simmering pork bones for hours. This shortcut version can use ingredients such as chicken stock, soy milk, miso, sesame paste, garlic, ginger, soy sauce, and a little fat or oil to build richness, body, and savory depth in minutes. The broth is heated until smooth and flavorful, then poured over springy ramen noodles so they carry the creamy soup well. Toppings such as chashu, soft boiled egg, green onion, corn, mushrooms, nori, sesame seeds, or chili oil can make the bowl more filling and restaurant-style. The final ramen is fast, warm, and satisfying, giving home cooks a practical way to enjoy a rich Japanese noodle bowl when traditional tonkotsu takes too long.

00:00I'm Yudou and today on Sunashi, I'm going to show you how to make a delicious 10-minute
00:04ramen broth that tastes and looks like tonkotsu without the hours of simmering pork buns.
00:09Let's get started.
00:10First you need a saucepan, add 320ml of water, 2 tbsp of Chinese style bouillon granules,
00:181 tsp of dashi granules, 1 tbsp of lard, 2 tsp of grey garlic, 2 tsp of oyster sauce,
00:272 tsp of soy sauce, and 320ml of unsweetened soy milk.
00:37Turn the heat on low and just warm it up to your desired serving temperature and make sure
00:43not to let it boil.
00:44If the temperature gets too high, it could curdle.
00:47Mix it continuously to make sure it heats up evenly and also doesn't form a skin.
00:53I'm using a flat edge silicone spatula because it allows me to scrape the bottom of the pan
00:59more efficiently than a wooden spoon or something like that.
01:03Once bubbles start to appear around the edges, you can take it off the heat.
01:07Now that my broth is ready already, I'm going to cook my homemade ramen noodles.

01:17These homemade ramen only take a minute to cook, so I cook them after my broth is ready, but
01:23if your noodles take longer, you might want to cook them at the same time.
01:28While the noodles cook, I'll show what toppings I'm using today.
01:32Here I have classic pork chashu, menma which is fermented bamboo shoots, shredded wood ear mushrooms,
01:39chopped green onions, marinated boiled eggs, nori, brown sesame seeds, and benishoga which
01:48is a pink pickled ginger that adds a refreshing taste to this rich dish.

02:03Okay, my noodles are ready, so let's drain them and place them in a bowl.
02:09Now let's add the broth.
02:11I add about 2 ladles per portion, so this recipe is enough for about 3 people.
02:24Finally, we'll add the toppings.
02:27I just want to say, I'm not pretending this is an authentic tonkotsu ramen broth, but real
02:32tonkotsu is made with pork buns and takes hours of simmering.
02:37This recipe is perfect for people who want a flavour like tonkotsu ramen without the weight.
