00:00So I think my friends and I have officially perfected the jalapeno popper steak sandwich.
00:03And this is one of those combos where everything just works so well together.
00:06But don't get it twisted, I've messed things up a lot trying to get this combo right over the years,
00:09but that's what I'm here for.
00:10I'll go ahead and make those mistakes so you don't have to.
00:12Now we're going to start by charring up some jalapenos,
00:14then we can set those aside for a few minutes so they can cool down.
00:16And today I'm going to use some hex charcoal from Jealous Devil,
00:19because it burns really clean and hot, and that's exactly what we need here.
00:21And while we let that heat up, I'm going to cover the bread with some Baron Burton's beef tallow,
00:24so we can toast that on the grill along with our steak.
00:26And this is actually the same sandwich that my team and I made in Florida,
00:29which ended up taking second place, so you know I had to run it back at home.
00:32And I've got the full recipe down below for you like always,
00:34but the sandwich itself is pretty easy to make.
00:35But it is really important that you let the steak and bread get a little bit of char.
00:38When you do it right, there's just so much extra flavor that you can bring to the sandwich.
00:42And one of the other things that made this sandwich such a big hit was the popper cream cheese.
00:45It's only a few ingredients, but this stuff is incredible.
