00:52But what does this mean for food?
00:55Halal basically means permitted.

01:07As far as the specifics are concerned, interpretations vary.

01:24Crucially, the animal must be ritually slaughtered with a single incision across the throat.
01:32And the animal must be completely drained of blood.

01:41We must be transparent and stand by our word.
01:44That our meat is halal, slaughtered according to ritual.
01:50But nowadays, many European slaughterhouses follow these rules strictly.

02:46In Judaism, too, there are do's and don'ts as far as food is concerned.

02:53As well as a few additional rules like the strict separation of meat and dairy.

03:05Take the restaurant Kana, which specializes in Arabic cuisine.
03:12Restaurant manager Asia Zoraiki is seeing a rise in guests asking about specific halal standards before they visit.
03:22Young Muslims in Germany and other European countries are more confident now.
03:30They're more educated, engaging with religious questions.
03:34But they also see that what's on offer in Europe nowadays is more varied than in their parents' generation.
03:47Chef Nimr Saleh is Muslim, so cooking halal is a matter of course.
03:52He believes that dishes made halal are also better in quality.
03:58More tender, fresher. There is much less blood than with normal non-halal butchering.
