00:00All right, I've got a couple of oxtails, like the entire thing.
00:04If you go to the store, you'll see them already cut up into small pieces and prepped.
00:09And you know, if you go shop for oxtails right now, the last couple of years, the price has shot
00:13up.
00:14And what you want to do when you're prepping it is just cut some of that fat off.
00:17Not all of it, you want to leave some on, but they're pretty fatty.
00:20So you just want to kind of clean them up and get the hard, chunky fat pieces off.
00:25And then kind of expose some of that meat.
00:27And then that's it.
00:28With these actual whole tails, I'll just take the two biggest chunks.
00:31Because I also bought some oxtails already prepped.
00:33And they'll be ready for the smoker.
00:36So yeah, just a quick prep on these.
00:38And now it's time to get them seasoned and get them smoked.
