00:00All right, first up, grab a saucepan and pour in half a cup of water.
00:06Then add in half a stick of butter, half a tablespoon of sugar.
00:11I'm using brown but regular white works too.
00:14And a pinch of salt just to balance the flavor.
00:17Place the saucepan on the stove over medium heat and bring it to a boil.
00:24What I love about this cake is how simple it is.
00:27Just basic ingredients you already have at home and you end up with an amazing dessert.
00:33Once the butter's boiling, add half a cup of flour, just all at once.
00:38And start mixing right away until smooth and combined.
00:42Remember, butter must be boiling for the dough to turn out right.
00:46Cook the dough for about three minutes to get rid of extra moisture.
00:51It's another key thing that helps the dough rise properly in the oven.
00:56Transfer the dough to a chilled bowl and spread it out to cool faster.
01:01This is important. If the dough's too hot, the eggs will scramble and the dough won't come together.
01:07So let it cool down a bit before adding the eggs.
01:10We'll need three eggs at room temperature.
01:13Crack in the first egg.
01:16And stir it into the dough.
01:21The dough will be lumpy and watery at first.
01:24But that's totally normal.
01:26It will become smoother as you add the eggs.
01:29We're adding the eggs one at a time so they blend in smoothly and the dough stays the right consistency.

01:40So we'll add the third egg.
01:42But I'll crack it into a separate bowl first.
01:47Whisk it lightly with a fork, just to mix the white and yolk.
01:52Then add just a little bit of it into the dough.

01:59Adding the third egg separately helps us control the dough's texture and make sure it stays smooth and not too runny.

02:12Grab two 6-inch pans and line them with parchment paper.
02:17There's no need to grease them.
02:20Spoon the dough into both pans, making sure they get the same amount.
02:25You can also use a scale if you want them perfectly even.
02:29I'm using a spatula to spread the dough around, so it's even in each pan.
02:34Well, it might not look Instagram perfect, but trust me, the taste will totally blow you away.
02:41And now, let's pop the pans in the oven.
02:44Make sure the oven's nice and hot.
02:46And bake for 25-30 minutes until they're golden brown.
02:51In the meantime, let's whip up the filling.
02:54Grab two eggs and separate the yolks from the whites.
02:57You'll just need the yolks.

03:13Toss in some cornstarch.
03:16And mix it all together.
03:18You can also use regular flour instead of cornstarch.
03:22It'll still taste great, but the texture won't be as delicate.

03:28Grab a saucepan.
03:30And pour in some milk.
03:33Just a little more than a cup.
03:35Place the saucepan on the stove.
03:40Add three tablespoons of sugar.
03:42A pinch of salt.
03:45And a few drops of vanilla extract if you like.
03:49Set the stove to medium heat.
03:52And warm the milk stirring constantly.
03:56Until it's just about to boil.
03:58Once you see these tiny bubbles, it's time to temper the eggs.
04:03Add the milk to the eggs in small amounts.
04:06Mixing as you go.
04:08So the eggs don't curdle.
04:11If you pour it all in at once, you won't get smooth custard.
04:15It'll be full of lumps.

04:28Now pour the egg mixture back into the saucepan.

04:35And place the saucepan back on the stove.
04:38I recommend lowering the heat so the mixture warms gently.
04:43Make sure to start stirring right away.
04:46And keep stirring until it thickens.
04:50If you don't stir enough or take a break, you'll end up with lumps instead of a smooth filling.
04:57Then transfer the custard into a chilled container as soon as it's done so it stops cooking.
05:04And cover it with plastic wrap.
05:08Pressing it right onto the custard all over the surface so it doesn't form a skin.
05:15Once it's cooled to room temperature, pop the custard in the fridge for at least half an hour.
05:21Now put one stick of softened butter in a bowl.
05:24Make sure it's not frozen.
05:26Then toss in one tablespoon of sugar.
05:29And start beating on medium speed until light and fluffy.
05:36If your butter's frozen, guys, it just won't get light and fluffy.
05:40So make sure it's softened but not melted.
05:44Take the custard out of the fridge and let it come to room temperature.
05:49Scoop a few spoonfuls and add them to the butter.
05:55Beat on medium speed until everything's fully combined.
05:59Keep the butter and custard at room temperature to avoid splitting.
06:05Add the custard a spoonful or two at a time.
06:08Don't dump it all in or it could turn grainy.
06:11And that's not what we're going for.
06:14Beat on medium speed until you've got a nice smooth filling.
06:18Now let's take the cake out of the oven.
06:22And let it cool down a bit.
06:25Use a cooling rack so it cools evenly and the bottom doesn't get soggy.
06:30I'm using a springform pan to assemble the cake.
06:34But if the pans you baked in are tall enough, you can use them.
06:39I like to use this acetate strip.
06:43It gives you those nice even edges.
06:46And finally, we get to add the filling to the first layer.
06:51Just drop a few spoonfuls on there.
06:54And spread the filling evenly all over the layer.
06:58Make sure you add every bit of the filling, guys.
07:02Now grab the second layer and gently put it on top of the filling.
07:07Give it a little press so it sits evenly.
07:11And just like this, cover it with plastic wrap.
07:14Making sure it touches the surface.
07:17And last but not least, pop the cake in the fridge.
07:21To chill and set for at least a few hours.
07:24Though, letting it sit overnight works best.
07:27And that's it. Our cake is done.
07:30Take it out of the pan.
07:32And sprinkle some powdered sugar on top if you like.
