13:05You know you you have sweet sour bitter and salty
13:09Well, there's this separate flavor that's a bit of everything and it was proven to be to exist
13:14There are taste receptors in the tongue that respond to umami and this is the fifth taste
13:19And it was a japanese professor who discovered it in 1908 things like it's it's like a pleasant savory taste
13:26It's unique
13:27It's like you know ripe tomatoes that are just yummy or smoked fish that's yummy
13:32Strangely how but it is a specific thing that the receptors on your tongue respond to this
13:36It's interesting now you know you can buy tubes of umami in our supermarkets
13:41And i'm sure people don't know what to do with it you probably think it's like marmite on your toast you know but um
13:47It's the addition of that
13:50Those elements combined together in foods
13:52say like parmesan cheese is rich in umami
13:55And you could combine that with with seaweed to produce unique taste
13:59And that's what i'm really looking forward to sampling in japan

22:31And yesterday I talked about food named after body parts,
22:34and today I thought I'd look at the curious inspirations behind some food names.
22:40Like tailoring, for example.
22:41The Italian filled pizzas, calzone, mean literally trouser leg, because they look like one, sort of stuffed, if you like.
22:49While tagliatelle and fettuccine both mean little ribbons.
22:53Some foods are named after weapons, believe it or not.
22:56I mentioned recently on the programme that pomegranate is the source of our modern grenades, because of the shape.
23:03Well, garlic comes from two old English words meaning spear leak, because of the shape of their leaves.
23:08And incidentally, the gar element of garlic is behind all sorts of names that have slaying and slaughtering at their heart.
23:15The innocent name Gerald means spear ruler, and Gary Baldy means spear bold.
23:21Looking far back, Greek and Roman gods ensured their own immortality by dining on ambrosia, and that word meant immortal.
23:29And to quench their thirst, of course, they drank nectar.
23:32And that's, again, Greek, and it means overcoming death.
23:36And its legendary sweetness inspired the name of the fruit that's a nectarine.
23:40And the scientific name of the cocoa plant that produces chocolate is theobroma,
23:45and that literally means food of the gods, and all chocolate lovers will know about that.
23:49And finally, staying with gods and food, the legendary king Tantalus infuriated the immortals by stealing their nexa and their ambrosia.
