01:51actually we started in 1930 it's 96 years so my grandmother started it and I am the third
02:01generation my daughter the fourth generation she's a pastry chef from La Cordon Bleu this
02:11is a Gohan bakery it's probably the only Gohan bakery in Calcutta today
02:16over here we have savouries we have cakes we have pastries we have a whole variety of items
02:28but our most famous are the rich fruit cake the Christmas cake the walnut cake the British
02:36tea time cake coconut macaroons those are the small item brownies these are the popular items
02:44see this is the time of Christmas it's a time of giving a time of celebration so
02:55people gift each other and in Calcutta it's across all communities it's not confined to
03:02only the Christian community so what is most popular is the Christmas cake the traditional
03:08rich fruit cake at this time which people gift we have a rich fruit cake and we have a special fruit
03:15cake in a tin for gifting purpose that is more moist more nuts and with that for those who do not like
03:23fruit fruit there is walnut cake but the most popular the rich fruit cake yes the other machinery is used to

05:12The love that we get year on year, every year during Christmas, I think it is only because
05:20of the passion in which we bake our products and the fresh ingredients and we have personal
05:26supervision which we are producing for four generations.
05:29I am the fourth generation in the bakery.
05:32So I think every year people come back for the taste of our cake and which is very different
05:36from everywhere else and the lines that you see is just proof of that.
05:41Will this continue in your next generation?
05:44Hopefully, once I get married I am sure the next generation will want to get into the bakery
05:50because I am extremely passionate about it and for me it is something which I do from
05:55the heart.
05:56So I think I will inculcate that in the next generation as well.
05:59You intend legacy?
06:00Yeah obviously, legacy is very important.
06:02My grandfather did it, my great grandmother did it, my grandmother did it, my mom did it,
06:06I did it.
06:07I am sure my generation following will also do it.
06:10So you are going to celebrate in a few years in 100 years.
06:13Yes.
06:14What message will you give to Calcutta?
06:16I would say thank you Calcutta for the love, we are going to celebrate 100 very soon and
06:21I think the love that you all have shown to the bakery is the only reason why we have managed
06:27to come through 100 years and we would want to go for another 100 years and I think the cakes
06:34can just get better and better and it has been there for four generations and we have just managed
06:40the same recipes through generation and with our own personal touch in each year and I think
06:46it will be very special when we reach 100 because it will be only because of you all that we are here.
