02:30Cousins James, Jack and Leah from Herne Bay in Kent are as close as it gets when it comes
02:37to a tight-knit family.

02:47I work within the police, and I also am a beach lifeguard.
02:51I love helping people, and that's why I do the jobs I do.
02:55Jack is their cousin and partner in crime.
02:58I would describe myself as a happy-go-lucky character, really.
03:01I always call them the terrible twosome, because they're always getting in trouble, always
03:05being cheeky, and I'm always trying to keep them in check.
03:07I love Leah.
03:08One thing they all have in common is their lack of skill when it comes to the kitchen.
03:13This is a bit embarrassing.
03:15This is when I melted the scales on my cooker top.
03:17An overcooked set of kitchen scales.
03:21Delicious.
03:22Jack is going to be the worst cook, I can tell you that for certain.
03:26Once I put pizza in the oven and left the plastic on, so I've completely ruined the oven.
03:31That looks dreadful.
03:33I had to get it professionally cleaned before my parents got back off holiday.
03:36Still eat it?
03:37Did I get things out?
03:38Yeah.
03:39No.
03:40No, I didn't actually.
03:42I actually ordered one in the end, I think.
03:45I think you've really got your work cut out for you there, Mary.
03:49This year, the cousins want to do something special for their mums.
03:53My auntie Kaz and my mum are sisters, and they're super close.
03:58They're always, always thinking of others.
04:00It's down to our mums, the reason why we've all become so close as we've grown up.
04:05My mum has multiple sclerosis.
04:07She got back when I was ten years old.
04:10She'd trained to be a nurse for the NHS for three years,
04:13and then she started deteriorating quite badly.
04:16And not long after that, she was in a wheelchair, so she had to basically stop.
04:21It's been heartbreaking for my mum seeing her baby sister rapidly decline
04:26and struggle to do the things that she used to be able to do.
04:29Like so many of us, the pandemic forced this close-knit family to become distant.
04:34But frontline jobs and illness meant they haven't all been together again for two years.
04:39It's been a really difficult couple of years for our mums.
04:43My mum's only been able to see carers, which has been very tough on her.
04:47I work with a lot of the public all the time, which makes me high risk.
04:50I want to shield myself from the vulnerable people in my family.
04:53I was quite ill last year, and I had to go into hospital.
04:57And because I was then classed as being vulnerable, I couldn't see my mum.
05:01My sister is my mum's only daughter, and they are very close to one another.
05:06And when they haven't had the opportunity to see each other, it's very difficult.
05:09With Kaz and then Leah considered high risk, the family were unable to be in the same room.
05:14For their mums, it's been hard not having the family around, especially at their favourite time of the year.
05:19Last year was the first time I didn't spend Christmas with my mum, which was very, very tough of her.
05:26And yeah, it was pretty miserable, to be quite honest.
05:29Spending Christmas apart from everyone, it was completely difficult and it was weird.
05:34It's something that we're not used to as a close family.
05:37My mum is a really good cook.
05:39She always would make the gammon, stuffing, Christmas pudding.
05:43She'd go all out and make everything from scratch.
05:45That's probably why we're all still such bad cooks now,
05:48because we've never had a chance to actually give it a go.
05:50So this year, the cousins want to surprise their mums with a Christmas feast they'll never forget.
05:57This is the first time we're going to be all together in two years,
06:01so it's going to be really exciting.
06:02I want to do this feast for my Aunty Kaz and my mum, because I think they're incredible.
06:07They're the most selfless people you'll ever meet.
06:10They'll do anything for anybody. They really deserve this.
06:14Two inspirational women. It's our chance to give something back.
06:17My mum is so resilient.
06:19The things she does just amazes me from day to day.
06:22She really, really deserves this.
06:24It's going to be one to remember. I'm looking forward to it.

07:09The last Christmas we were all together, I was David Beckham.

08:28And we're going to make a very memorable Christmas feast.
08:33I think we're going to be cooking something
08:35well out of my league, I think.
08:37One of you is going to be making a first course.
08:40Smoked salmon patty with a wonderful layer of watercress
08:44running through the middle.
08:45Oooh.
08:46How do you cook salmon?
08:48How do you know it's done?
08:49Sounds so technical for me, mate.
08:51And for the main course, it's glazed ham
08:54with clementines all shiny on top
08:57and some sautéed garlic potatoes.
08:59And there's a double mustard sauce to go with it.
09:02Oooh, that's a bit of me, that is.
09:04And for dessert, we have a dish worthy of any Christmas feast.
09:09I know your mums used to make tiramisu.
09:12So we're going to make my tiramisu red fruit trifle.
09:16That will go down well.

09:48As the self-confessed hapless cooks make their way to Mary's for a much-needed masterclass,
09:55she's got time to start prepping the main.
09:58I've got a beautiful piece of gammon here.
10:01This is unsmoked.
10:02It could be smoked.
10:04And I have a nifty trick that makes it much easier to lift it out of the pan.
10:09Fold a long piece of foil into three and wrap it under the joint.
10:14Hold it up and into the pan.
10:16Now, it's very important that it fits snugly, because I'm going to cook it in orange juice,
10:22which gives a lovely flavour.
10:24Pour it in.
10:25If it doesn't fit snugly, you'll have to use too much orange juice.
10:28Add three bay leaves and a couple of cinnamon sticks.
10:33Then bring to the boil on the hob, allow to simmer for five minutes,
10:38before popping into a 1.30 fan oven to cook low and slow for two and a half hours.
10:45I'm ready for my novices to arrive.

11:09And we'll go straight to the kitchen.

11:12So, last Christmas, for all of us, was a bit of a disaster, wasn't it?

11:17That's right, yeah.
11:18It wasn't much for Christmas at all, to be honest, so I'm going to make an extra special one this year.
11:21Well, I've chosen the menu, and you've got to choose who's doing what.
11:26Oh, well, can I do the dessert, please?
11:28Yes.
11:29Who would like to do the ham?
11:30I would definitely take the ham if that's all right with you guys.
11:33He's a meat man, aren't you?
11:35Yeah, I am.
11:36Well, it looks like I'll do the starter, yeah.
11:39Are you good on starters?
11:40No.
11:41No, I've never made a starter in my life.
11:43I've got my work cut out, teaching him this one.
11:46My salmon and watercress pate looks simply fabulous on a festive table,
11:52but getting those layers right might require some practice at home.
11:56This is special, and it's going to wow everybody.
12:00Here's the recipe, and read it well.

12:06If you think there's anything that he will forget, just jot a few notes down.
12:10Okay, we'll do it.
12:11I've got a loaf tin here, and this is a £1 loaf tin,
12:15and I'm going to line it with non-stick paper.
12:17It would slip about if I didn't butter the tin.
12:22All right, making notes.
12:23Yeah.
12:24It's going to be turned out, and in order to have a pretty top to it,
12:28I'm going to put a little sprig of dill.
12:31Four small sprigs of fresh dill.
12:33Oh, gosh.
12:34Must keep to Mary Berry's recipe.
12:40Using long strips of smoked salmon, we're lining the tin,
12:44making sure to overlap each piece so there are no gaps.
12:48Looking good, Jack.
12:49Cheers, mate.
12:50You're quite a delicate touch with that.
12:52It looks very good.
12:53Yeah.
12:54Then I'm going to put a little bit at the end.
12:56Making sure the whole thing is covered.

12:59I'd like you to do the middle there, because it's going to be watercress.

13:05I've got a little bunch of dill here.
13:07If you take off the stalks and chop it.
13:10So, do you think the mums will like this?
13:12Absolutely, yeah.
13:13Yeah, they're going to absolutely love it.
13:14This is right up there straight, yeah.
13:17I don't think they can imagine that we're going to produce anything
13:19that you're going to teach us.

13:21It's really one massive surprise.
13:22Now for the salmon pate filling.
13:25Into a processor and the remaining smoked salmon.
13:29I've got 180 of full fat cream cheese.
13:32I'm going to put two teaspoons of hot horseradish.
13:36A tablespoon of lemon juice.
13:38You're going to be all on your own, so make sure you know what you're doing.
13:41Yep, I am taking notes, yeah.
13:43Well, these guys are.
13:44Yeah.
13:45100 grams of soft butter
13:48and 150 grams of cooked fresh salmon.
13:52Which are simply baked in foil for 15 minutes in a 160 fan oven.
13:58Season.
14:00And then whizz together until it's smooth.
14:03And tell me when you think it's all one colour.
14:07About that, do you think?
14:09Yeah, I think so.
14:11Good judgement.
14:13Perfect.
14:14Now for Jack's watercress and dill.
14:17I don't think you've chopped that too well.

14:26Mixed with three tablespoons of the pate and it's ready to go.
14:31Jack, your mum's been pretty poorly for quite some time.

14:39We are quite a close-knit family.
14:41And, you know, she gives a lot to other people.
14:44She'll never ask for anything back.
14:46She was diagnosed with MS a while back now.
14:49And she lost quite a lot of independence.
14:52So cooking was quite a bit of a passion for her.
14:55So not being able to do that as much anymore is, yeah,
14:58it's quite upsetting.
14:59But hopefully I can make a fantastic meal for her.
15:02She's going to love.
15:03It'll be Christmas around my house for most years, I think,
15:05if I can pull this off, so, yeah.
15:07Well, now comes the real test of his skill,
15:11assembling the pate.
15:12It's patience when you're doing this.
15:15First, it's in with half of the salmon pate.

15:43For the final layer, top with the remaining pate
15:46and smooth out evenly.

20:41that makes this ham so sumptuous.
20:44Add four tablespoons of thin-cut marmalade into a pan.

20:52Add four tablespoons of water and a clementine sliced into discs.

20:59Now, that knife is very sharp.

22:39We're going to do something a little bit smarter,
22:41taking little baby potatoes
22:43and cutting them into four slices
22:45and roasting them with garlic and rosemary.

27:34Those go into a pan with 50 grams of castor sugar and onto a gentle heat until soft and defrosted.

29:48600ml of double pouring cream.
29:52A little to start with in there.
29:54Six tablespoons of icing sugar, and one tablespoon of vanilla extract.

30:03And then whisk until lovely and thick, adding the remaining cream as you go.
