07:51so I'm going to kind of be like they summoned the wrong S figure.

08:39but I really would like to get a win before that at some point.
08:42So I got cutting out snowflakes.
08:45We're going to start on vanilla cremeau.
08:49All that vanilla bean is what we're going for.
08:52I am inspired by just the pure white of snow for the snowflakes,
08:56and I'm just doing a vanilla bean entremé.
08:58Vanilla is sometimes a kind of negative term.
09:02Like, it's bland, it's boring, it's vanilla, but that's so wrong.
09:07Vanilla, it can be a really strong powerhouse flavor on its own when it's done right.
09:13I'm going to do a few different textures of snowflakes.
09:16I'll do some with gum paste, some that are hand-cut out of wafer paper.
09:19And then my naughty twist is going to be a little depiction of little Charlie running with scissors,
09:24so excited to make these snowflakes.
09:26This is my vanilla white chocolate mousse.
09:29It's always a nerve-wracking thing because the whole dessert is based on if it sets up or not.
09:33So we'll see.
09:34Being a chef around the holidays really pulls you away from your family and your life
09:38because there's more events, more parties.
09:41If I were to win that $25,000, I want to just give back to my family
09:45and take them on a trip to make up for all the holidays we weren't able to spend together
09:50and make some new memories.

09:56No, it's just, you know, the three of us rocking and rolling over here on the nice team,

10:11So I got building a snowman, which is very fun and very cute.

10:16So I'm making a spice cake and a little bit of raspberry ginger compote
10:21and a maple ginger mousseline.
10:26So the judges have been really telling me to focus on presentation.
10:30Flavors, I think, are good.
10:32Presentation, I really want to bump it up.
10:33I love to decorate in more of an abstract way.
10:38I feel like I don't really make stories very often with my decorating,
10:41so that's going to be, like, the challenge.
10:43So the goal today is to do a fun little scene
10:48in which there's, like, light poles in the background
10:51and then a snowman in the center that's, like, half being built
10:55because it's building a snowman.
10:59Maple ginger.
11:00I love him.
11:01I love the maple.
11:02The last main he I won for my team, which was awesome.
11:06It was really nice that my team was safe,
11:08and it was because of me.
11:10Being the youngest baker and winning
11:12helps to prove myself to a lot of the other bakers
11:14in terms of what I can do only at the age of 19.
11:18So hopefully I keep up the good mojo.
11:20So I got snowshoeing.
11:22I'm making a rum raisin carrot cake.
11:24Rum raisin is definitely a flavor combo
11:26that my family goes crazy for during the holidays.
11:29And I decided to go with, like,
11:32thinking back to my holidays in the Middle East
11:34just because my only experience snowshoeing
11:36was in the desert while I lived in Saudi Arabia.
11:39My dad, he's from the Middle East,
11:41so I moved to Riyadh when I was nine,
11:43and then I left when I was 11.
11:46It does not snow there ever,
11:48and I figured that because
11:50that was an important part of my life,
11:53I could definitely make snowshoeing
11:55into a sandy day activity.
11:57That's the naughty part.
11:58There is no snow.
12:00I'm going to decorate it to, like,
12:01look like a nice desert,
12:02so it's going to have, like, palm trees,
12:03and I'm going to have, like, a camel
12:04and some, like, gingerbread people,
12:06and I'm going to have the gingerbread people
12:07and the camel snowshoeing on, like, the desert sand,
12:10just making it all, like, very cutesy
12:12while also still trying to be pretty naughty.

15:53So my baklava will consist of layers of phyllo.

15:57a spiced pistachio and walnut mix
16:00and will be doused with a holiday spiced honey syrup.

17:26I've never, literally never worked with fondant.

17:39I'm adding a chewy caramel to the top of my brownie,
17:43and it will kind of cut through that richness

18:23so I carefully, using a warm offset spatula,
18:26I kind of smooth out those cracks.

18:31It's definitely killing me a little bit inside,
18:34because I want to impress the judges.
18:36I want to put up a really nice, clean dessert.
18:39And if there's a lot of bumps and lumps on this entremet,
18:42it's really going to show through my entremet.

19:09When we heard we had a snow day,
19:12we just rejoiced,
19:13because it was like,
19:14oh, I can watch cartoons all day
19:16and then go outside if I want,
19:18trying to build snowmen and igloos.
19:21Snow days were the best days.
19:24Looks great.
19:25Smells so good.
19:27My cakes look good,
19:28which means that it's all okay.
19:31I didn't add my baking soda too late.
19:33Crisis averted.
19:36I do kind of like a ribbon design around the sides.
19:39And then on the top,
19:40I sprinkle a lot of graham cracker crumbs
19:42to look like the desert salmon.
19:43I get my dessert out of the glass chiller
19:47and I'm going to cover with my mirror glaze.

20:30So coming into this competition from day one,
20:33I don't know that I did believe in myself enough,
20:35but today this is a challenge
20:37that's really heavily focused on the decorating aspect
20:41and I really want to just crush it.
20:43If we're going to go big,
20:44we better go home.
20:45Or go big or go home.
20:47That's what I meant.

20:50Oh, look at our beautiful baby.
20:52And now the most important step,
20:55straight out the oven.
20:57So you make the syrup first
20:59and then you have a cold syrup
21:00and then when you pour it onto the hot baklava,
21:02that's how it really takes in that flavor,
21:04really infuses into those nuts
21:05and that's when you really get that ooey, gooey,
21:08scrumptious, umptious kind of baklava
21:09texture you're looking for.
21:10And now it's time to start working on the volcano.
21:13I grew up in Chicago
21:15and I have a lot of really great memories
21:17of going out, playing in the snow.
21:19But that said,
21:20because we had so much snow all the time,
21:23a lot of my favorite holiday season memories
21:26was escaping from the snow
21:28and going somewhere a little beachier,
21:30a little more tropical
21:31and that's part of the reason I wanted to do a volcano.
21:32It's kind of that escape from the snow.
21:35Perfect.
