Fried mushrooms, two large champignons:
Heat a frying pan over medium heat
2 tbsp. Olive oil
Salt / Pepper to taste
50 gr White wine
1 tbsp. Soy sauce
Fry for an average of 7-8 minutes. Turn over every 2 minutes.

Batter. Ingredients for 2 chicken breasts.
2 Chicken eggs
2 tbsp. Chopped herbs (green onions and parsley 50/50)
2 tbsp. Grated Parmesan
Salt / Pepper / Chili to taste
50 ml Milk

1) Cut the chicken breast in the style of the Butterfly, beat off the thick places. We achieve a uniform thickness of 1.5 cm on average.

2) Heat a frying pan over medium heat + 2 tbsp. Olive oil + 1 tablespoon of butter.

3) Breast in flour - in batter = in a frying pan.
Attention!!! do not overheat the pan and oil, otherwise the eggs on the meat will quickly burn. Fry over medium heat for 4 minutes on each side = 8 + minutes
The chicken is cooked at a temperature of 70 * C in the thickest place.
Use a cooking thermometer.
Set aside cooked chicken, on a warm plate.

Cooking the sauce:
De-glaze the pan with white wine 100 g and 50 g Grappa or whiskey / cognac
Flamming (but not necessarily, the alcohol will evaporate itself )
Add 100 gr of Strong chicken broth.
Reduce it in half.
1 clove garlic, minced

2 tbsp. chopped greens (parsley and green onions)
30 grams of butter.
