00:53We like to start from a strong foundation of authenticity.
00:55So we did a lot of cooking research.
00:57We had heard that Thomas Keller at French Laundry had a fairly authentic French kitchen.
01:04He's one of the best chefs in America.
01:06So we went to Thomas Keller and said, how would you make Remy into a French chef?
01:11Remy really had a strong desire to be a cook.
01:14And that desire really propelled him to have the courage to move into an area where he wasn't really familiar,
01:21where it wasn't really natural for him to be in that kitchen.
01:24What do I always say? Anyone can cook.
01:28Well, yeah, anyone can. That doesn't mean that anyone should.
01:33Brad Lewis interned over at the French Laundry, so he got the real deal.
01:39How can you not know your own recipe?
01:42I didn't write it down.
01:43Cooking, there were secrets passed down for a hundred years.
01:48And it felt like, just even in two days, that I was being given secrets of generations.
01:54If you sort of let yourself steep in their knowledge and their experience,
01:58it will find its way into this world.
02:01And we're having to create this three-star restaurant from scratch.
02:04So, through observation and just perception and watching them work,
02:08and what they've done will sort of pervade the film.
02:12I will have whatever he is having.

02:21Brad was invaluable in giving, I think, an authenticity to our very fable-like film.
02:27As it turns out, rats can cook.
02:30Have you ever had a pet rat?

02:32Did you work in a lab with rats?
02:34No, perhaps you lived in squalor at some point.
02:36Nobody, nobody knew.
02:38We have Mickey Mouse as a national icon,
02:40so having a rat in a kitchen, it's not so far-fetched.
