01:10You have to have a perfect flaky crust. You're feeling cannot be runny
01:16So it's is a really tough challenge
01:20And while you're at it
01:22Each of you needs to make two identical pies for serving and we'll tell you why later. Okay, okay

03:38I make a stellar pie so we're gonna kick team nutty's butt today
03:42I'm gonna make a chocolate pecan bourbon pie
03:45And we're adding tons of bourbon obviously
03:48For this challenge I'm feeling inspired by thanksgivings at my grandma's house
03:55As a kid we would often build leaf piles in the yard
03:58So I'm gonna decorate with leaf piles made out of pie dough
04:02Because what's nicer than like a bunch of children playing in leaves
04:06Making an all butter crust
04:08I learned a long time ago that you don't want to leave your butter too big
04:11The more you can work it into the dough the more tender it's gonna be
04:15And I'm baking a metal tin because it conducts heat faster than glass or ceramic
04:19Helps you to more quickly evaporate the water in your butter to create the separation of layers in your dough
04:24So that you don't have soggy bottom that you have a good crust
04:27And then for my filling I pre-toasted my pecans just to express the oils get them aromatic
04:34Judges told me last time that my flavors weren't balanced and I really want to make sure that I do that today
04:38I tasted elimination last time and I don't ever want to taste it again
04:42I came here to win
04:43I feel like it would validate a part of myself that's always wondered like should you have gone to culinary school
04:50Or should you have done something different I'm gonna fight with everything I got

05:00Coming into this competition in the beginning
05:02I don't know that I did believe in myself enough but today I'm a top contender
05:07Ashley how does it feel you could win this whole thing you could take home twenty five thousand dollars
05:11I could and part of the dream of doing that is being able to take my dad on a trip to scotland
05:17He had a liver transplant about nine years ago
05:20So hasn't been able to travel as much and then this would be a dream for us. I love that. So what kind of pie are you making?
05:26So I am making a pumpkin black pepper
05:30So that's kind of the secret ingredient the black pepper really adds a little zing to it
05:34And then I'm gonna top it with a maple whipped cream as well as stained glass confetti sugar cookies to represent Christmas ornaments
05:41The reason I'm making it today actually is because of my dad because he hates pumpkin pie like absolutely despises it
05:48It became my favorite pie as an adult and now out of spite I bring it to thanksgiving
05:52So we're going a little bit naughty on the sense that my dad hates pumpkin pie
05:56It's so ironic you're making something your dad hates hopefully to send him to scotland
06:00So the irony I hope that that makes him proud
06:05I hope this pie is good enough to win immunity pie is something that I feel pretty confident about
06:10So today I'm making a lemon meringue pie
06:13On the top will be a toasted swiss meringue with some silver bells out of chocolate candied lemon and holly leaves
06:20And I think it just really reads nice Christmas

06:34She dominated, but I know my way around pie dough. I use shortening
06:38Shortening kind of gives you a little bit of that structure gives you some flakiness
06:42And then I did add some lemon zest and some thyme to the crust just to give it a little bit of an herbaceous pop
06:47Mm-hmm. So team nice is going to continue to keep rocking it. We can whittle the naughty team down a little bit

07:16He's very good at doing he knows how to make a mean pie, but I mean if you had to guess who's the next baker to go home on that side
07:25I would say either aaron or camry just because I think the other three have been really consistent. Yeah, but you know

07:34My bakes have been average at best and I feel like I'm kind of the weakest link on my team
07:40Which is why this week? I want to make something mind-blowing something that's not only gonna taste great
07:46But something that's just gonna be memorable
07:49And so I'm making a blueberry cream pie to add a little bit of like a deeper flavor to my blueberry filling
07:55I want to play into the warm spices like cinnamon and ginger and stuff that you would traditionally see around the holidays
08:01And then also I'm adding bourbon
08:03I feel like the flavor of the alcohol plays well with fruit and it's gonna taste bomb
08:07And then I'm gonna decorate it inspired by one of my old family traditions
08:12Which was where my siblings and I would not only leave milk and cookies, but we would leave shots and a pack of cigarettes for Santa
08:21It was definitely naughty. I'll say that so my pie is going to have a cream filling
08:26There's gonna be a spiced blueberry filling and then I'm gonna top it with pretzel cigarettes
08:31Because I really want my pie to look like an ashtray
08:34It's definitely a risk, you know, I can't help but to be like really nervous
08:38But yeah, I think if this one can come out the way I wanted to it'd be a winner

09:45And this year i'm feeling a little blue christmas
09:48So i'm making a blueberry ganache pie. There we go. I'm getting teary-eyed thinking about my pie
09:54Coincidentally, I woke up this morning and I was really really missing my grandma
10:03I started thinking about all of the things that made me feel close to christmas and close to her and I think how do I turn that into a pie?
10:11So it will be a blueberry pie filling a blueberry white chocolate ganache top and decorated with a goat cheese whipped cream

10:24I spent most of my childhood sitting on my grandmother's lap in the lake of the ozarks
10:30Staring up into constellations. I learned constellations from her so i'm really excited to make this in her memory

10:51My bottom oven just was left open so oven temp dropped to 250. I'm not gonna blame anybody else, but I don't have time

11:05I'm scared because it takes a while to bake such a thick pie to make sure it's baked in the center

12:04The inspiration for this dessert today is a combination one my favorite pie flavors
12:09I'm making a pumpkin and cherry pie pumpkin pie was the first spice
12:14I was excited to eat when I got here in america and I love cherries
12:19So I'm gonna bake my pumpkin filling and later
12:22I will add my top for the cherries and I will cover the pie with a puff pastry lettuce
12:29And I will decorate with cinnamon buttercream cherries candy cans and hollies
12:34For my cherry compote. I'm adding orange juice to make my cherry really pop
12:40I will take team naughty down by the flavors. He's talking smack over there. Yes, be ready
12:47I'm coming for you. Oh my god
12:50So I get my pies out of the oven with a pistachio frangipane baked on the inside. I'm feeling good
12:57So today we have to make two identical pies
13:00So my inspiration is honestly just like my love for the flavors apple pie is like classic
13:04But I want to do like a little twist on it. So I'm making a bourbon ginger miso apple pie
13:12And I'm gonna fill each of the layers
13:13So I want a little layer of frangipane a little layer of miso caramel a layer of cooked apples
13:21And then to decorate I want to do a cute beanie inspired hat
13:26It's gonna stay nice because it's gonna be the cutest little hat you ever did see fit for the holidays
13:32So the main thing with this challenge I feel like there's something coming
13:37Because like having to make two pies why I don't know so we just gotta wait and see i'm waiting for the other shoe to drop

14:37I have decided on an apple pie because it's kind of an american classic it's a risk to go simple, but i'm gonna make it stand out by

14:46Shred apple and dice it i cook down the shredded apple so it really concentrates that flavor so there's no mistaking
14:52It's an apple pie and I try not to use too many spices because otherwise it just covers up all the natural
14:57Kind of brightness that apples have and then i am decorating it with braided pie crust and a little whipped cream
15:04Fresh and i'm also going to make a little semi rotten apple in the center with a little christmas worm and just to really tie in
15:10The naughty theme it's a lot to make the filling and break down all these apples
15:14But i think it could be very delicious and impress the judges oh my god
15:18This looks so dark i'm freaking out a little bit because my pies are looking just a little on the scorched side
15:26I'm worried about what the judges are going to think about this
15:28But it's too late for me to really do anything about that now
15:31So i'm just gonna keep moving forward with my plan and hope for the best

15:39So this is santa's real naughty list the only thing naughtier than being naughty is being naughty and pretending to be nice
15:45All right well tell me about your pie holiday pie so a sweet potato and pecan pie
15:50Sitting on a pretzel and ginger snap crust with a toasted brown sugar meringue and i'm gonna have the nice team made out of showbread cookies
15:58Setting aflame a marzipan santa's real naughty list trying to destroy the evidence of their naughtiness
16:05I've sort of made a name for myself as being the one to kind of go
16:08A little past the line on the naughty side and i want to just keep that up
16:11You have okay well at least if anything you're consistent you have such an incredible energy and passion for this i can tell
16:16How did you find baking like a lot of kids is kind of doing it for fun at home
16:20And then as time went on i started to continue to find my love and my passion for it
16:25But it like i had a while where i wasn't sure if it was going to be something that lasted
16:30Okay because i just had a lot of struggles with like food and eating i'm diagnosed anorexia okay
16:36So i actually had to drop out of culinary school oh man yes to go to a recovery
16:41But since then i've gone through treatment i'm in the greatest place i've ever been in my life right now
16:46And the last four months i've gained about 50 pounds and a big motivator in doing that was being able to come
16:52Out here and live out a dream of being here and it's like even like if i'm not successful in every
16:57bank just being physically healthy enough to be here is like a win in and of itself yeah
17:01i'm so happy you're doing so great thank you i appreciate it keep it up man we'll see you there
17:05there's such a stigma around this disorder and especially being male and i think if i'm able to
17:12be that person to talk about it and to show that there is a way out that would just mean the world to me

17:26on man i'm having a little bit of a hard time getting my chocolate out it just doesn't seem to
17:31want to come out of these molds if i don't get these out i'm not going to have these silver bells
17:34that my whole thing is based off of well that was the kind of the main component of my decoration
17:39so this is incredibly frustrating okay i'm just not doing that today so i'm like rushing to do a
17:45backup plan right now instead of silver bells i'm gonna try to do some white chocolate snowflakes and
17:51hopefully it doesn't get lost in translation hey bakers 10 minutes fuego bakers remember you have to

18:06the ornament cookies i'm going to use isomalt in the middle of them to kind of give them like a 3d look
18:12the reason i chose this decoration for today is because my niece makes me stained glass ornaments
18:20every single year for christmas and it's one of my favorite things to receive from her and she's eight
18:24shout out to clara so i'm going to take a little spin on those ornaments and stack the cookies with a
18:29little bit of royal icing to glue them together with some sprinkles in the center to make them look
18:33like a little bit of a snow globe with sprinkles inside i just want a little bit more sprinkle
18:39zhuzh now i'm carving my cherries and dipping in red chocolate because i want this to be my
18:50decoration on top of my pie oh i need you to sit please i realize that my blueberry ganache this is
18:58looser this needs to be frozen which i know but i am running out of time right now five minutes left

21:10i'm a little stunned it is a bit shocking to then have to now judge your own teammates especially
21:18because we all are competitive and we all want to win yeah we'll see how this turns out

21:28very important you guys are honest with one another in terms of whose two pies are the best
21:33okay so charles tell us what you made so i just made a classic apple pie and then on the top it's
21:39a little christmas worm coming out of a rotten apple i think that blade is a really really strong
21:44technical scale the crust is so beautiful yeah i think this is a phenomenal apple pie the textures
21:49are insane the cream is really good honestly i can't find a single negative well that's only one
21:55dessert yeah so it sounds like you guys are off to a good start i really want to beat out ashley
22:00at some point so i'm feeling optimistic i want to go next i did a sweet potato custard pecans on top
22:06then obviously the real naughty list did you also make caricatures of the other bankers on team i have

22:58super smooth and it's a good balance of sweetness and acidity without being overpowering so best ashtray

23:08the top two all right ashley what did you make so i made a black pepper pumpkin pie and i did the pumpkin
23:16pie because my dad hates pumpkin pie it's beautiful i love the cookie my one potential iffy thing is it

23:28yeah yeah my crust is raw it's a little raw in the middle a little raw on the base yeah i'm seeing it

23:59charles is going to come down to you and your pies all right oh my gosh i feel like i'm gonna vomit

24:10time and it feels a little bit like a fall from grace to potentially go home because of a pie i am
24:18sick thinking about it yeah

24:30for everybody what did you make so my little christmas hat pie is a bourbon apple ginger miso pie
24:38with a pistachio french pan it is adorable oh so cute i'm confident that we can all deliver on
24:45constructive criticism but i think stepping into this moment as the pie guy i feel like i could have
24:53the tendency to be a little over critical i think it's pretty sweet sweet okay overall i'm just worried
24:58about it hitting the judge's palette like the saltiness is there but there's a lot of sweet yeah i
25:04agree with you all right next up we have aaron my pie is a blueberry ganache pie it's reading nice i've
25:11i've never really seen that color blue i like the texture on the crust it's like nice and flaky i think
25:16the ganache up top is just a touch broken i don't like the consistency of my pie but it needs me a more
25:23solid pie yeah okay we're gonna go jean carlos next so my pie is a pumpkin and cherry and on the top
25:31cinnamon buttercream i love it i would see this in a storybook i like the flavors going on i really
25:39like the tartness and contrast to the spice of the filling yeah it's a fun choice it's not one that i
25:44think i've seen i agree not just because i made but i think tea's great i'm happy all right pie guy

25:59chocolate crumble on top this is so good the pie is nice and flaky i love the creaminess of the
26:05filling i love that i can get the bourbon it's not too much no you can eat that all night all right

26:17have a lemon meringue pie it also has a lemon thyme pie dough um the crust for this one unfortunately looks
26:25like a little undercooked and i'm not sure about the meringue seemed like a little bit loose and
26:31the citrus flavor is very strong yeah i i definitely agree everything about the pie was not what i wanted
26:38and i would be incredibly embarrassed to present it to the judges so i think the consistency of chase's
26:45pie was so good the flavors were so unexpected and john carlos chase and john carlos that's my vote i would
26:51agree your two best pies in this challenge belong to chase and john carlos without a question i hope

27:03asked each team to present to you their two best holiday pies they're hoping are going to win their team

27:15so this is our first time getting to see team nice being judged in front of us and i am so nervous
27:24because we're going up against the pie king himself chase great to see you again okay why don't you tell
27:29our judges what you made so it is a bourbon pecan chocolate pie oh my god that crust that's gorgeous
27:36yeah this is the whole thanksgiving experience at my grandma mary's the pecan pie is not only the one
27:44that's always fought over but while we were kids i think to distract us and keep us out of the kitchen
27:51it was like go collect sticks go make leaf piles in the yard so i wanted to replicate the leaf piles
27:58it looks delicious like if i would see that in a bakery case i would say give me three of those
28:05so i love what you've done here now i do think it's nice looking but does it really show the nice
28:11theme i don't know oh oh my god i feel so weird to be in here to watch us and look for bad comments
28:18it's like a little too even a little too symmetric to give me something as organic as a leaf pile okay

31:11the cherry is underwhelming because the pumpkin is overwhelming and i think it's not balanced yeah
31:20everything is just a little bit off first of all buttercream on a pie i think is pretty weird
31:26that is weird i'd like that you kind of push the envelope with making pumpkin pie with cherry and
31:32your crust is incredible it's flaky it's buttery between you and chase i don't know who makes a

31:50they're gonna be as critical with ours if not more so don't forget it's a little of both yeah

32:45drink too yeah my parents like that was for dad oh of course it was for your dad i know that now
32:50you know i gotta tell you team naughty you guys have absolutely committed to the naughtiness i love it

33:12crust you nailed it that crust is delicious that blueberry cream well balanced it's very very

34:00hello judges hi charles i made a classic american apple pie and we would go apple picking as a kid
34:08but every once in a while you get a little critter inside that rotten apple so i did a little cheeky
34:14play on that character it's sort of naughty nice like you could have gave us like a really like nasty
34:19looking worm it's cheeky but i want to see a little bit more naughty got it naughty there's a worm in your
34:25pie like what do you what do you want have like a switchblade i make a pretty good apple pie so i'm
34:33anxious to taste this one i'm excited for you to taste it too let's do it charles whenever you're ready
34:40look how thick the bottom is yeah that bottom crust is super thick it's just this
34:44crust is all pretty thick if you sell an apple pie

34:57i don't like it just kidding i'm being naughty i love it
35:04and i'm not a big apple pie girl but i think this would change my mind
35:08well i love your filling the apples are cooked perfectly i love the cream i don't love the bottom
35:15i just think it's a little bit thick yes yeah just need a little more some because the underside
35:21it's almost flowery like you kind of get that sort of flower that flower flavor oh at least my don't
35:27taste flour it's true but on the whole this whole thing together is a really really nice bite of apple pie

35:53all right so bakers we know it wasn't easy picking just two holiday pies from each of your
35:57teams to present to the judges but the judges have identified the top pie from each team
36:03the best pie from the naughty team came from
36:09tarik let's go good job and the baker who made our favorite pie on the nice team was
36:20chase hi but only one baker left us fooling and eyeing and that baker is
36:27it's a good job
36:32let's go we did it we did it we did it we did it tarik the crust on your spice blueberry cream pie was
36:38crispy and the filling was so satisfying and delicious really great job tarik thank you oh my god
36:46now that i know that my entire team is safe and it's because of me i feel like i really redeemed
36:53myself in so many ways good job buddy it's a bummer that i didn't take the win for my team
37:00but i'm really happy for tarik okay so that means of course one member from team nice is now up for
37:07elimination but here's the thing we don't feel comfortable deciding who's going home
37:13since we didn't taste all of your team's pots we only tasted the top two so you guys are going to have
37:22to do it oh my god
37:26only you know who deserves to be walking out that door so you're going to have to make the decision
37:37amongst yourselves that's brutal gagged i am shocked that team nice has to eliminate one of their own
37:45this was not what i was expecting i am gooped gagged bewildered so we have to decide we have to decide
37:51this is a really really horrific shock now as you know nice team of course the top two pie makers
38:00from your team are safe that's chase and john carlos thank you that of course leaves alex aaron
38:07and camry but as a team you now have a decision to make why don't you all come with me i wouldn't
38:15want to be them oh my gosh okay guys look i know this is a really emotional moment we've obviously
38:22never done this before and you're going to write down on this card the name of the baker

39:41other to be honest there i'm glad we don't have that pressure it's brutal but at the end of the day
39:51it still is a competition and we will narrow down to only one winner so it's the name of the game thank
