02:47Potato latkes are wonderfully crispy, and are made by combining shredded potatoes with flour, egg and onion to create some of the most savory pancakes in town.
02:56You're going to fry them for three to four minutes on one side until browned, and then flip them over gently and fry them for another three or four minutes on the other side.

04:21This recipe hails from Sweden and refers specifically to how the potato is sliced.
04:26So I am going to get two of my beautiful spoons.

04:31I'm going to place the potato in between the gap to stop the knife going all the way through.
04:37Small and delicate incisions are made into the skin, but not all the way through.
04:42This essentially fans out the potatoes in a visually appealing manner.
04:46The Hasselback presentation also allows for the potatoes to crisp up in the oven.
04:50Meanwhile, the incisions left over by the chef's knife allow for any number of topping ideas.
04:56Hazelnuts is the nut of choice, but you could use almonds.
04:59These could include everything from little bits of spicy to crunchy bits of bacon or breadcrumbs for an absolutely delightful appetizer or side dish.

05:28That said, smashed potatoes are a fun way of livening up this traditional side dish for a modern culinary palate.
05:34The main difference is how these little spud bites are prepared, since smashed potatoes aren't whipped smooth, but rather squished flat.
05:41You can use either a potato masher or the smooth side of a drinking glass.
05:46This new, uneven shape allows for ultra-crispiness after they emerge from the oven, adding that all-important textural component to a side that's otherwise known for its lack of lumps.
