03:07We're also looking for innovative toppings and fries that are crisp and creatively seasoned.

27:42Then they will add their butter, which will be cut into cubes cold.

27:50You need that cold temperature butter because you don't want to have a pastry that is soft and wet in texture.
27:57Knead it until it is just firm enough where it holds together.

35:29I think had you cooked it a little bit more, it would have enhanced that crispiness to it.
