00:14:33so we have all the berries, which will be delicious.
00:14:37We absolutely love this dish.
00:14:39This is kind of two desserts in one,
00:14:41so we get the best of both worlds.
00:14:43You have a beautiful, wobbling berry panna cotta
00:14:46sitting on top of the tart shells
00:14:48with a delicious vanilla custard.
00:14:50We took inspiration from all different types of recipes,
00:14:53and then turned it into our own creation.
00:14:55Definitely want that dough done for the parts.

00:15:29we are making a duck egg creme caramel
00:15:32with a vanilla twill.
00:15:34Okay, so I'm going to do my duck eggs.
00:15:36Traditionally, you use like chicken eggs,
00:15:39but we're going to go with duck eggs
00:15:41for some extra richness.
00:15:44This dessert is definitely a classic.
00:15:47So, Bailey, for the perfect creme caramel,
00:15:49we want a nice silky smooth cream.

00:15:53This is a very risky dessert.
00:15:54Yes, it's simple, but it can definitely collapse
00:15:57if it doesn't bake and chill on time.
00:16:00We know that in our last instant restaurant,
00:16:02Lo and Lil scored a 10 for their dessert,

00:32:46it was the best feeling hearing that justin and will love our pasta dish i feel like they're quite
00:32:56tough to impress and that means we could be threatening to them and i'm so excited
00:33:02i think a little bit more salt would have been really nice maybe the mushrooms a little bit finer
00:33:05chopped through it i liked how creamy it was i liked that the truffle wasn't too overpowering the only
00:33:12thing is i think the pasta was slightly overcooked
00:33:14the loran liu are being a little bit childish with their critiques i feel like this is
00:33:22borderline disrespectful
00:33:24you could tell it wasn't even genuine they were just trying to find things to throw out there that
00:33:28it could be bad
00:33:30so let's try loran liu's sous vide lobster with lobster hollandaise and pickled fennel salad
00:33:45we are showing that lil and i are here and here to stay
00:33:49our main dish is definitely elevated so our willingness to take on the judges critiques and
00:33:55feedbacks and adapt that into our new food is why we are going to win today bon appetit

00:34:57my lobster was just really inconsistent the hollandaise sauce it's got plenty of salt in
00:35:03there can taste the salt which does give seasoning to the lobster and then with the pickled salad
00:35:08there was nice good flavors in there all three together as a banger dish if the if the lobster was
00:35:14done well i had one of the bigger pieces of lobster and i think that is like undercooked and quite raw in
00:35:23the middle law i don't know about that it is absolutely not that's crazy the lobster i had
00:35:30was cooked great so yeah you're just throwing comments in there to try and make it seem like
00:35:34that but no i highly disagree with that comment uh maria how do you feel about your position
00:35:40i feel that we've done enough and we definitely have very good flavors and nothing really went wrong
00:35:47for us so i think we do have a stronger dish well no one get ahead of themselves because we're only
00:35:54halfway through teams take a break while manu and i have a little chat about the dishes
00:36:02we are trying to show manu and colin that we can step up our game when needed
00:36:05we're not here to cook basic home food anymore so i'm just praying that the judges are gonna love it

00:36:31hollandaise goes well together very tasty better food mhm marian bailey's pasta we did ask for simple
00:36:40but there's also shown amazing technique the addition of the truffle inside out of the pasta was
00:36:46great yep the sauce was brilliant i thought it was executed very well the showcase truffle and the
00:36:52pasta is full of flavor i've got one definitely in front of the other um but after seeing both desserts

00:39:20and this is the beauty about baking right you can be as creative as you like this is our last chance
00:39:27to prove to the judges that we have everything that it takes to go through to the grand final
00:39:33once we're half an hour through we can take out our caramel and give it a try so i'm starting
00:39:41the vanilla creme lol's gonna do half i'm just separating the egg yolks for dessert tonight we
00:39:46are making our berry panna cotta and vanilla creme tart we need to get out the perfect dessert if we want
00:39:52a chance at staying in this competition and we did not come this far to go home now no two desserts in
00:39:58one is definitely a semi-final tactic we want to show that we can do double the workload in the
00:40:03same amount of time and produce a beautiful dessert this dessert is so delicious it's nice and light but
00:40:09you get berry vanilla and a beautiful short crust pastry we have done a lot of prep for dessert in
00:40:14main course but there is still quite a bit to do i'm going to get this on i'm going to move the panna
00:40:21cottas to the freezer just to make sure they set perfectly my biggest concern for dessert is the panna
00:40:27cottas and getting them set in time otherwise it's not making it to the table these looking
00:40:32really good little i'm just putting them in the freezer just to make sure they definitely harden
00:40:36up we could have done just a panna cotta just a tart but we thought you know what we've seen that
00:40:42already in the competition and this is the semi-final this competition is so important to lil and i
00:40:47oh my god keep going after this our friendship is 10 times stronger good that looks perfect long
00:40:55remind me to stab it with four yes we want this heart base to be pretty thin but not too thin that
00:41:01it cracked i definitely don't want this to be our last dishes of the competition we don't come from
00:41:07much yeah but we really want to be able to get to that grand final to show our families and the judges
00:41:12how much we can do all right lil i'm just putting baking beads in our bases look at these first ones
00:41:17in real quick i'll start rolling the rest yeah a lot of them need to do well to save their position
00:41:25or to move forward that's right is it good taste it perfect so smooth so silky
00:41:35and then on the other side you've got marie and bailey they've worked very well up to now like
00:41:40they've got the main components done now they just need to zhuzh it up a couple of twills over the
00:41:46top and that's it so is that going to be enough to win this 30 minutes to go give us a winning dessert

00:46:50because they're over complicated the desserts and if they had a pair of the back maybe they would
00:46:55have got a 10. i would know bailey we need to more faster we can start plating we'll get those berry
00:47:03compots in the sauce jars tarts are in the oven and we still got to fill the tarts with vanilla creme

00:54:01quite nice quite nice quite nice are really nice you know quite nice that was very specific
00:54:07so how confident that you're making it through to the grand final quite confident or very confident

00:58:46lord and lil for mail you served us sous vide lobster with lobster hollandaise and pickle funnel salad
00:58:54obviously the lobster was inconsistent cooking it was a huge piece of meat that was sort of not really
00:59:02looked after but i thought the hollandaise okay well with that lobster the hollandaise it was a little
00:59:10bit salty but you know what it worked and then you had the pickle salad it sort of had the makings of a
00:59:16really nice lobster roll without the roll yeah i thought it was good but it wasn't great yeah
00:59:25i definitely feel like we have a chance it was just the cook of the lobster that was inconsistent
00:59:30and if theirs doesn't scratch up then we have a very good chance of going to the grand final
00:59:36marie and bailey your main was truffle and porcini tagliatelle with wild mushroom sauce
00:59:46the quality of the pasta was amazing the flavor of the pasta alone was amazing
00:59:52that sauce beautiful the the flavor of the dried mushrooms seeped in there there was definitely truffle
00:59:58in there and i think some of your main courses have had 50 000 things going on and this one had four
01:00:05and it's one of the best you've cooked for me it was full of flavor it was full of heart and i had
01:00:09personally thank you maria good job don't jump ahead but yes i think we're good now for dessert
01:00:22lol and lil for dessert you gave us berry panna cotta and vanilla creme tart i've never seen it and i
01:00:30probably will never see it again but it kind of worked that pastry was a 10 out of 10 just alone thank you
01:00:39we all sat at the table all i could hear was crack crack crack crack of the pastry and that that is
01:00:44the sign of a very good pastry creme patissier tick berry panna cotta jiggle jiggle jiggle not too sweet
01:00:53but sweet enough with a little bit of hint of berry in there frankly i thought it was an absolute great
01:00:58dessert thank you so much yay he loved it i was really hoping manu would love it 10 out of 10 just the pastry
01:01:06alone i'll take it hearing lo and lil's positive critique from the judges this is the most stress
01:01:14that i felt this whole competition like they definitely could beat us here marie and bailey
01:01:20for dessert we had duck egg creme caramel with vanilla trill a creme caramel it's a childhood memory
01:01:29for me flavor was delicious it was rich that duck egg really shone for me the twill added that little
01:01:36bit of texture every element was on that plate for a reason even the one raspberry and a little bit
01:01:42of cream cut through the richness of the duck egg the technique and the flavor was there it was simple
01:01:48and it was elegant thank you thank you thank you wow great we did it that's like the best
01:01:55feedback we've ever had so this is our decision
