00:09Most people would not know who Jeremiah Tower is.
00:12He was on the front of magazines.
00:13He was not all over Europe.
00:14We hadn't seen his kind before.
00:16He was a natural.
00:17A superstar.
00:18And this was a chef.
00:20He certainly is considered a father of the American cuisine.
00:25We should know who changed the world.
00:27We should know their names.
00:301972, Jeremiah Tower walks into Chez Panisse.
00:35It was Alice Waters' little dream restaurant.
00:39The first thing they did is celebrate local ingredients.
00:41I wrote the menu of the California regional dinner.

00:46Complete re-evaluation of not just American food and ingredients,

00:52Then all hell broke loose.

01:54It's inexcusable.
01:57He has no clue what he's doing.

02:09If anything is worth doing, it's worth doing in style and on your own terms,
