00:07It's one of those foods, the more I look at it and try to handle it,
00:09the less I have an idea of what this is going to taste like.
00:19Good morning from New Delhi, India.
00:20Today, we are doing it big.
00:22I've probably been to over 10 cities in India just to eat street food.
00:26I've had the biryani's and the dosa's and all the classics.
00:28Today, we come to Old Delhi for something special.
00:31I'm looking for the most unique street food you will find anywhere.
00:35I'm not talking food that goes back for thousands of years.
00:38I'm talking food creations that are new, that are pushing the envelope,
00:41that are going to blow your freaking brain off of your shoulders.
00:44We're starting the day in Old Delhi.
00:46It is wild. It is raucous.
00:48I am on a rickshaw, powered by a man's quadriceps.
00:51In just a few moments, we're going to get there.
00:52I'm very excited. We have a lot of food to try today.
00:54Things that I guarantee you have never seen before.
00:57Stick around, because you don't want to miss a day.
00:59Or at least you can watch it at 1.5 speed.
01:00I wouldn't blame you for that.
01:09Right now, we are in the back alleys of Old Delhi.
01:12This is where you find the really good street food.
01:14Paratha, chapati, that.
01:16Can I be honest? I don't know what that says.
01:17Nobody, let's be.
01:18Oh, let's be.
01:19Yeah, it's let's be.
01:19So much good stuff here.
01:20And the best part is you can just see it from the street.
01:23You can point and you can order the electrical system.
01:25It's like an OCD person's worst nightmare.
01:27Last time I was here, I saw monkeys.
01:29I mean, this is like a paradise for a monkey.
01:32We are very close to our first destination.
01:35You can tell because it's getting really loud.
01:37Let's move.
01:41We've come to our first location.
01:42Here is where they're making something called paratha.
01:54You can see all the different filling options they have.
01:57There is peas and cheese and onions and chilies.
02:00Tons of masala, salt, spices.
02:02So there's so much that can go in there.
02:03Usually it's something savory.
02:05But here, they have a paratha like you've never seen before.
02:08Let me show you.
02:09At most places, you're just going to get the classic paratha.
02:11But here at Tata Babu Ram Davi Dayal Parante Wale,
02:17they're doing things a little bit differently.
02:18We have chocolate paratha, mango paratha, and this one.
02:22This is what we're here for, the candy crush paratha.
02:25It sounds like a disaster.
02:26We're going to see how they make it and see if it is indeed delicious.
02:29This is the candy.
02:31It is dried candy fruit.
02:32Here, it's going to get fried first.
02:34And then I'm not sure what after that.
02:36Step one, put the candy in the pan.
02:38Mix it about.
02:39Add some water.
02:42Next, add in some vanilla.
02:44Next, rubbery.
02:45This is like condensed milk, essentially.
02:48The fruit has kind of become a bit melty.
02:50The smells off here are incredible.
02:52It's like cotton candy.
02:56For the next step, he's putting in jam.
02:58Then they put in some almond powder.
03:00All of that is going to go into the bread.
03:03He's not rolling it out.
03:04He's just kind of crimping the edges.
03:06This is looking a lot more like a dumpling than a paratha.
03:09Next, it hits the ghee and gets fried up.
03:11This is legitimately my first meal of today.
03:18And it is quite a wild one.
03:19First, I want to back up.
03:20Yes, I could show you this and explain how crazy it is.
03:22But you must see the comparison to really understand.
03:25This is much more of a classic paratha.
03:27This is a mixed stuffed one full of every different vegetable they have here.
03:30I wouldn't call it like a full serving of vegetables for the day.
03:33But it's something.
03:34I'm going to go with the chutney.
03:35I'm a big fan of chutney.
03:36I give it a little bit of a dip.
03:37It's dripping.
03:38It's fried.
03:39It's savory.
03:39It has to be delicious, according to Indian law.
03:46Sour, crunchy, and spicy too.
03:49I love this stuff.
03:50That is a standard experience.
03:51That's actually not what we came here for.
03:52I came here for this right here.
03:55The candy paratha with curd on the side.
03:58It is a dessert paratha.
03:59Something I've never seen before.
04:01And I'm guessing many of you haven't either.
04:03Even if you live within 10 miles of this place.
04:05Before putting the curd on it.
04:06I'm going to try it just like this.
04:11Oh, I like it.
04:13It's almost like syrupy sweet.
04:14The candy, the vanilla, the jam.
04:16All those flavors together.
04:17It is so fragrant.
04:18It smells like you are in a confectionery.
04:21The last thing there is to do is try it with some of this yogurt.
04:25To kind of cut the sweetness a bit.
04:27Oh, yeah.
04:27Life is all about balance.
04:29Here we are.
04:29Basically eating dessert for breakfast.
04:31But it's okay because I piled on a spoonful of yogurt.
04:35That is funky.
04:36It's like a brand new flavor of yogurt that just never made it past testing.
04:40Overall, a big success.
04:42A great start for the morning.
04:43Very impressed with what they've done here.
04:44We have set the goalposts high.
04:45We have a lot more to see.
04:47Let's go.
04:47We have come to our second location right here.
05:07This place is serving all kinds of drinks and desserts.
05:10Very unique desserts.
05:11Here.
05:12It looks like a mini little watermelon.
05:13I'm going to order it right now.
05:15He grabs it and he starts to cut it open.
05:17As he cuts it open, you can see it is resembling a watermelon a bit.
05:21They put the whole thing here on top of a block of ice that's been covered in aluminum foil.
05:25And that is to keep the outside solid.
05:27I'm told the outside is made out of butter that has been dyed green.
05:31The inside.
05:31We googled it.
05:32It's unripened curd cheese.
05:34Yeah, I don't know what that is either.
05:36It's imaginative and creative.
05:37Right here, you can even see like little mock seeds.
05:40Wow.
05:40And I'm trying to figure out the texture here.
05:42It feels like some kind of a thick sugary cake.
05:44It's one of those foods.
05:45The more I look at it and try to handle it, the less I have an idea of what this is going
05:49to taste like.
05:52Oh.
05:53Hmm.
05:54Oh.
05:55Wow.
05:55That's a lot to figure out in one bite.
05:57So the inside actually tastes more like a bread that's been saturated with a ton of syrup.
06:01It's very syrupy and sweet.
06:02Every time you take a bite of that red part, it is like gushing out sugary sweetness.
06:06On the outside, it's fluffy but not so rich as, you know, pure butter would be.
06:10We're still pretty rich.
06:13The seeds inside, turns out they are black cardamom.
06:15Not watermelon seeds at all.
06:17What a gyp.
06:18This dessert has jumped the shark.
06:19It has gone too far.
06:20Humanity is not ready for such food.
06:22India is living in the year 3000, especially this man.
06:24He's in year 3022.
06:26He took a fruit, stripped out everything completely healthy about it and replaced it with just sweets
06:30and fat and interesting mysteries.
06:32This is like if Elon Musk created dessert, roughly speaking, not really.
06:36Anyways, we have a lot more to see.

06:40We've just found the monkey.
06:55I'm going to feed it.

07:14This place is awesome.
07:20We are here right now for food number three.
07:23It's getting wild by man.
07:24You ready?

07:32Some sticky dose of liquid.
07:34That is going to completely coat the surface here.
07:36Then butter.
07:37And then tomatoes.
07:38Onions.
07:38Green onions.
07:39Green herbs.
07:41Green bell peppers.
07:42This is basically a salad at this point.
07:43It's a salad with a little bit of cheese on top.
07:45After that, paneer.
07:50Oh, so one kind of cheese, then another kind of cheese.
07:53This one is...
07:54Tandoori sauce.
07:55Tandoori sauce and a little bit of green chutney and then some cooking cream.
07:59Our salad just got a little bit less healthy.
08:01Tomato sauce.
08:02Some masala.
08:03Other masala.
08:04Chili powder.
08:05Other masala.
08:05Oh, now all that is going to get the mash in action.
08:08This is a wild combination.
08:10Pretty much, it looks like everything they have in the refrigerator, it's going on here.
08:13A little bit of water because it's getting dehydrated.
08:15This is something I would have made a sophomore year of college when I was high.
08:18Just kidding.
08:19I never made it to sophomore year.
08:20I did do freshman year three times at three different schools and then I quit.
08:24Butter?
08:24You just put some paneer.
08:26So we have grated paneer.
08:27We have big cubes of paneer and then that will be laid to rest.
08:31It needs some alone time.
08:32Oh, he takes the lid off.
08:33It looks like it's been long enough even though it's just been about 25 seconds.
08:36So many flavors.
08:37Very curious what that's going to taste like.
08:39Now that comes completely off.
08:42This is such a shocking turn of events.
08:44He's putting all of that goop into a separate bowl.
08:46But the dosa is still there.
08:48It remains.
08:49Now more toppings.
08:50Processed cheese being processed even more.
08:53He draws a line.
08:54He scrapes it around the edges, being careful to not cut it or crack it.
08:58And then right here.
08:59Oh my gosh.
09:00Ladies and gentlemen, have you ever seen such talent?
09:02He makes a giant cone and I believe that is going to come to rest right here.
09:07Yes.
09:08Like a giant funnel that is accepting only large quantities of love and deliciousness.
09:13It's not done yet.
09:14Oh no.
09:14He puts cream on top.
09:16He puts in some green stuff.
09:17I don't know what you'd even call that.
09:19This mash, this dipping sauce, this soup.
09:21I'm going to go inside and try it out.
09:23To me, this is just proof that we live in a simulation.
09:29Because how could this have happened otherwise?
09:31We all know that Indian dosa.
09:32This is something else.
09:34Oh, there's a f***ing cow.
09:35We got caught in traffic earlier and I was trying to figure out, what was up with the traffic
09:39here?
09:39I found the source of the traffic jam.
09:41No, it's not this guy.
09:42It's this guy.
09:45The cow just chilling.
09:46Middle of the city.
09:47It's not something you see every day.
09:48Unless you're in India.
09:49That is remarkable.
09:50Oh my gosh.
09:51Its friend is right down here.
09:52So, you might be asking yourself, how do they survive in the city?
09:57There's not exactly expensive green grazing pastures for the cows here, bud.
10:01People will feed them.
10:01Whatever cows eat, pretty awesome.
10:03All right, back to this.
10:07Oh, it is like an Indian Super Bowl dip full of spices and it's super cheesy and smoky.
10:14You can see the dosa itself is caked with basically everything that was in the dip.
10:17It's been kind of cooked on.
10:18Give that a little bit of a dip.
10:19See some of those vegetables, the cheese, everything kind of congealed together in one
10:24large scrumptious mass.
10:28I kind of can't believe it.
10:29This is legit delicious.
10:31The main flavor you're getting from it is kind of processed cheese and spices.
10:34You feel it.
10:34It's heavy.
10:35Definitely junk food.
10:36But it's good junk food.
10:39Masterpiece.
10:39They create a new, fun, interesting dish and a new way of eating it.
10:42So, instead of eating the dosa that's just too plump full with all these ingredients that
10:46might end up getting soggy, you've got a crispy dosa here.
10:49While everyone's getting stuck in traffic because there's 45 cows on their way to a vegan rally.
10:54You can be inside in air conditioning.
10:55Take your time.
10:56Sit back.
10:57Relax.
10:57Enjoy.
10:58We have come to our next location and this one is very exciting.
11:12They're making ice cream in an old school way.
11:14I know you're thinking, oh, ice cream.
11:16What's the big deal?
11:16No.
11:17Wait.
11:17And trust me.
11:18This is going to be wild.
11:19Are we going to be eating this ice on the sidewalk?
11:22Absolutely not.
11:22It's going to be put into this cylinder right behind me.
11:29After the ice, good old-fashioned salt to make that ice extra, extra cold.
11:33They've screwed the roller shut, but that's not good enough.
11:43They are going to seal the entire roller with dough.
11:46This is some insane level engineering.
11:49Is this how they built the Taj Mahal?
11:51Yeah.
11:52This is pretty much how they built the Taj Mahal.
11:54I'm told.
11:54This is the owner and inventor and his team.
11:58This thing has to weigh about 200 pounds.
12:00I cannot wait to see this.
12:01Here we go.

12:04This is not the food.
12:06Obviously, this is a very unique tool.
12:08Right now, it's already even forming ice on the outside.
12:11And then the next part, he's going to put on different ingredients.
12:15That is going to freeze as soon as it hits the wheel.
12:17First, that is rubbery and cream.
12:21Next, he's putting on fruit.
12:23Starting with papaya.
12:24Next, watermelon.
12:26Next, we have a banana.
12:27So this guy, he is doing great.
12:29His arms are probably a little bit tired, but I think he's crushing it.
12:31Here, tons of fruit going on, and it's just going to be layered and layered as it continues to freeze.
12:36Oh, and then we got oranges.
12:37Next, pomegranate.
12:39Oh, wow.
12:40I've never seen someone squeeze a pomegranate.
12:42This guy has a death grip.
12:43And then we have some rose flavor going on next.
12:45This is a green flavor I've never heard of before.
12:48Then we got mango.
12:49The flavors are just never-ending.
12:51Hungry customers cannot wait.
12:53They're tantalized by this action.
12:55Wondering, what is it?
12:56What is going on?
12:56Can I try a bite?
12:57Also, cow.
12:59Cow is excited as well.
13:00And my favorite fruit, Hershey's chocolate.
13:03This here is the end product.
13:05Mesmerizing.
13:06Confusing.
13:07Beautiful.
13:07He uses a steel blade, and he literally chips off everything that is frozen onto this incredible,
13:14cool cylinder.
13:19Oh.
13:21Woo.
13:22It is icy cold.
13:24It's so refreshing on a hot day like today.
13:25Such a mix of flavors.
13:28It's creamy.
13:28He's got that nice dairy base.
13:30I taste a little bit of the chocolate, but really, the taste that's peeking from behind
13:33the corner on the edge of my culinary periphery, it is that rose flavoring.
13:37Usually, I like roses for, like, giving to women, particularly my wife.
13:42Here, rose's food, basically.
13:45It's hard to deny the awesomeness of this food and even the texture.
13:48It's like little chipped ice cream noodles here.
13:50It takes them about eight, ten minutes to make one batch.
13:52We were the first customers of the day, and my gosh, it's almost sold out already.
13:56This is that pomegranate-y bite.
13:58Other delicious fruit juices.
13:59Let's try that on.
14:02I'm trying desperately to taste pomegranate.
14:04The only problem is that rose is so strong, it's hard to taste anything else.
14:08Super awesome.
14:09It's hot and dry like a dessert.
14:11So, this is a treat for the ages.
14:13One of the most unique street foods I've ever seen.

14:15It's very inventive, fun, creative, and tasty.
