00:15today we are going on a little food journey to south korea not through airplanes or trains
00:19but through flavors crunch and a little storytelling magic because in my kitchen
00:25recipes are never just about food they are about history emotions and journeys so let's talk about
00:32a dish that has made millions of people around the world fall in love korean fried chicken i yes
00:38that golden brown double fried crispy chicken that's sweet spicy sticky and oh so irresistible
00:45but do you know this dish is not just a recipe it's a cultural story long ago fried chicken wasn't
00:52really part of korean tradition in fact koreans were more into stews noodles and rice-based meals
00:58but after the korean war in the 1950s american soldiers brought their style of southern fried
01:04chicken slowly koreans added their own twist and by the 1970s a whole new legend was born unlike the
01:12heavy greasy versions elsewhere koreans wanted something lighter crispier and coated in sauces
01:18that explode with flavor it became a favorite evening snack especially with beer in korea they
01:24even have a word for the combo to make chicken plus mekyu beer imagine sitting by the han river in seoul
01:30a basket of crispy chicken in one hand a cold drink in the other chatting with friends under the city
01:36lights that's the true korean spirit preparing for the feast now let's recreate this magic in our
01:43kitchen for this i have some beautiful chicken drumets and wings you can use any cut but wings are
01:48traditional ingredients you'll need one kilogram chicken wings drumets one cup flour plus one half
01:55cup cornstarch one teaspoon salt one teaspoon black pepper one teaspoon garlic powder one teaspoon ginger powder
02:03oil for deep frying for the sauce to tbsp soy sauce 3db sp gochujang korean chili paste to tbsp ketchup to tbsp honey
02:161tbsp brown sugar to close garlic minced 1tbsp sesame oil sesame seeds for garnish when you see the list you might feel
02:26it's simple but when these ingredients dance together in the pan it becomes a korean drama on your plate the
02:33rhythm of frying now here comes the fun part korean fried chicken is all about that double
02:38fry technique the first fry cooks the chicken the second fry makes it shatteringly crisp it's like
02:43life itself sometimes you need to go through fire twice before you shine so i dip my chicken in a mix of
02:50flour and cornstarch seasoned with salt pepper garlic and ginger the cornstarch is the secret it gives that
02:57glass like crunch into the hot oil they go sizzling bubbling and slowly turning golden when the first
03:03batch is ready i take them out let them rest and then fry them again now listen that sound of the
03:10chicken crackling in oil it's almost like music i call it the soundtrack of happiness the sauce that
03:15tells a tale while the chicken rests let's make the magical sauce in a small pan i heat sesame oil and toss
03:22and mince garlic the aroma fills the room like an opening scene then goes in gochijing that fiery
03:28red chili paste which is the heart of korean cuisine a spoon of ketchup for tang honey and brown sugar for
03:34sweetness and soy sauce to balance it all i stir it gently and the sauce becomes thick shiny and sticky
03:41a perfect glaze for our crunchy chicken if you taste it now you'll feel the punch of spice the warmth of
03:48garlic and the sweetness hugging your tongue the final act now the hero arrives crispy chicken meets
03:54glossy sauce i toss the wings gently each piece coated lovingly the sauce clings like a warm hug and
04:00suddenly the golden fried chicken transforms into fiery red jewels sprinkle sesame seeds on top maybe a
04:07few chopped spring onions and there you have it the legendary korean fried chicken as i played it i can't
04:13help but think of the families and friends in seoul gathering around small tables laughing sharing and

04:26a bite of korea in my kitchen i take one piece bite into it crunch that sound says it all the sweetness
04:32hits first then the chili heat followed by the garlic worm and finally that smoky sesame oil note my friends
