00:00We should be looking. It should be starting to form the actual sugar beet.
00:09I'm just hoping. I'm just praying at the minute. I keep looking at the weather. I hope it's going to rain.
00:13The law of averages said it has to rain at some point.
00:18You can see how yellow it's going. That's lack of nutrients, lack of water.
00:24You can see how dry it is. I can't. You can see how big the clods are.
00:33All of my potatoes need to be grown in a way for fish and chip shops.
00:36So when they're grown, I need to make sure they're a fair size.
00:39Because everyone wants big chips. No one wants tiny chips, do they?
00:42So I need to make sure that they get enough water.
00:44And unfortunately, I can't make my own water through irrigation.
00:47I can't get hold of licences. I can't get hold of the actual water for the crop.
00:51So I rely on the water that's produced from up above.
01:05So the worst case scenario, if we have no rain, it is going to be pretty dire.
01:10The crops are going to start deteriorating, going backwards.
01:14The yields might not fall properly. The grains won't be probably big enough.
01:18There'll be less grains than what we have with the cereals.
01:21Potatoes will be smaller. If they do actually don't get any rain,
01:24actually come to anything, they will be tiny, which are unsellable.
01:27People won't be able to eat. So it could be dire consequences
01:31if we don't get any water sometime soon.
01:34So this has been an exceptional spring here in the UK.
01:38To date, we've had about 80 millimetres of rainfall across the UK.
01:42Typically, we'd get over 200 millimetres.
01:45And we have to go back to 1852, which was the driest spring on record in the UK,
01:50where we had about 100 millimetres of rain.
01:52So depending on what happens in these last few days of May,
01:55we could see our driest spring on record.
