00:03and I'm going to be making a movie on chef life.

00:10Hi this is Manjusha Radhakrishnan from Gulf News Tabloid

00:14and I have here with me Indian celebrity chef

00:17Vikas Khanna. We are at the door of his restaurant called Kinara which opens

00:21in September and instead of doing the routine interview which we also have

00:26we thought we'll have a fun rapid fire with him. So are you ready chef?

00:30Brilliant. Thank you so much for having us. By the way

00:33the food is amazing. We had a teaser and we love it.

00:37So as far as food goes, he's a pass with flying colours.

00:41Let's see how he fares in the rapid fire. So what did you have for dinner last

00:45night? I had rajma. We were experimenting with

00:50something. Rajma? It's not rajma chawal no? No I don't eat

00:55rice in rajma. Fantastic and first dish that you

00:58cooked for your mother and she liked it. I think my mom is like a

01:03very easy pleaser. She likes everything whatever is done

01:07but yeah dal and all. She's that simple.

01:13And what's your ultimate comfort food? You know we were trying here

01:17channa dal. Remember the stuffed roti? It's like split lentils

01:21and you stuff it inside a roti and you make it into crispy.

01:25We were experimenting with that and we absolutely loved it. Do you see that what

01:28they're doing now? They're experimenting with how you get

01:31the Kinara logo which is from here on the plate. Yeah this is the motif

01:35right? Is it a particular flower? Should I

01:38know about it? Lotus. Okay fantastic. So Kinara it has to be

01:42that and what's the most overrated Indian spice and the most underrated one?

01:47I think overrated is cumin. Really? Yeah. Everybody keeps talking

01:51about it. So much like everything has to have cumin

01:53and one thing which is still underrated I feel it is a spice called mulatti.

01:59It's a licorice like a stem and it is like

02:02a amazing flavor and if you fall sick and everything they

02:07used to give you mulatti ki chai but it is just amazing. Clears up your

02:10system. Clear up system. It's amazing and then there is pipli peppers which I

02:14absolutely love. These are long peppers which are much

02:18they're so scenty and beautiful. I love them. Right and what's the most

02:21expensive ingredient in your kitchen in Kinara? Saffron.

02:25Saffron. Khuda saffron. Yeah you treat it like gold. It is gold

02:29and what's your favorite chef movie as a filmmaker yourself?

02:34I think one of the most favorite chef movie is going to be

02:37and I'm going to be making a movie on chef life

02:40but no it's I think there's so many. I love burnt.

02:44I love the pressure and I love breaking down but

02:48one movie which I can watch about kitchens over and over again is

02:52Ratatouille. Oh yes because it's a cute one and what's

02:55the craziest food that you have tried? A lot. A lot. I think if you've ever

03:00traveled to Bhutan there's an entire dish which is made with yak cheese

03:03and chilies. Rat cheese? Yak. Oh thank god I said

03:08rat. Sorry my bad. And it's chilies. It's

03:12very difficult to eat it first and then you get used to it and you

03:16are addicted. Okay we'll remember that and what did Obama tell you after

03:20tasting your food? Or any world leader for that matter if you

03:24do interact with them? I think it's always been different and

03:30they said that you know this is really pure Indian cuisine

03:34which they had eaten in someone's house or

03:37somebody had cooked for them or dear one. For me that compliment is always more

03:41powerful. The fancification is okay but when someone says that this could be

03:44compared to a home cook in India, I think it's a power. It's real

03:48power. Fantastic. As always remember to keep it
