Kempinski Hotel Mall of the Emirates’ annual Stollen charity cake sale has succeeded in raising funds for locally based charities.

00:00Today we will be talking a little bit about the Stollen event and that is we do yearly
00:11since 13 years so this is year number 13 we're doing this charity event and I'm here in the
00:18cold room where we have the storage of the Stollen and that we started preparing since
00:23about two months and then we need to reach the 800 meters as been announced and has been
00:29working on since the past two months together with my 11 colleagues from the pastry and
00:34the bakery and it's freezing here actually it's quite cold and then I'm excited being
00:39between these cake loaves. It started from the very beginning again that it's a charity
00:43event and it's not profit making event and all the money that we generate actually we
00:49bear all the costs of the bread and then all the cakes and whatever sales comes out of
00:54this cake and of this bread we give it to the charities. It's been since I'm here been
00:58given to the Red Crescent I mean honestly since the beginning this event started in
01:04the mall just to bring an awareness and it's a festive feeling so extremely popular and
01:10very well perceived by people this is what we have decided to continue doing the same
01:15event every year since 13 years and I'm sure this is not gonna stop it will continue growing
01:20because we saw the response above and beyond our expectations people loves it people like
01:26it and we feel so much in love with this event we don't stop planning for this event
01:31so when this event is over myself and Chef Gerard our bakery chef as well as our pastry
01:37chef we meet together and then we plan the following year that we set a target of the
01:42cake for the length for next year as well as other products and the sourcing and the
01:46starting of the process. Actually you know during Christmas you always or during festive
01:51you always think of festive products as we are a European brand company and our largest
01:59hotels are available in Germany what would it be better to pick than our origin roots
02:05with a German bread or a German cake and be it being it linked to the event of the Christmas
02:11and being given to a charity even though you're an UAE I mean we're next to the ski slope
02:16and then it gives you all that cold feeling of the festive. We used nearly 625 kilos of
02:23flour to just produce this amount of Schollen. Eggs is above 2,500 pieces of eggs so it's
02:31a lot of eggs being used into this event. We used nearly 290 kilos of raisins we used
02:39about 65 kilos of marzipan which is almond paste we use also hundred and twenty forty
02:48two kilos of orange peel just the the edges of the candied orange the same amount for
02:54lemon as well and then basically in a nutshell these are the main ingredients that we use
03:00for the event. Basically when we when we do the Schollen the first process of the of course
03:06mixing and baking and then preserving we do brush it with butter and the butter takes
03:12a bit of preservatives so it preserves the bread or the cake actually then we wrap it
03:17and then we keep it with the icing sugar which is sugar powder and then we keep it via dates
03:22as you can see the dates is all around me when has it been produced just to monitor
03:26the hygiene and the sanitation of the cakes.
