00:00 Well, as November draws its curtains to a close, and with Christmas being only 24 sleeps
00:05 away, preparations across the county have already started for the holiday season.
00:11 One hotel in Edgerton has already begun its preparations.
00:14 Fraser's Hotel and Restaurant is a sustainable hotel built out of fully renovated farm buildings
00:20 and is renowned for its Christmas puddings.
00:24 Last year they won a Great Taste One Star award from the Guild of Fine Food, a marker
00:29 of the impressive recipe passed down throughout the Fraser family.
00:33 I spoke to the current owner of Fraser's about her successes and how other businesses can
00:38 follow suit.
00:39 Yes, it's my grandmother's recipe, so it's over a hundred year old recipe that we have
00:46 slightly amended to utilise all local alcohol.
00:52 So we use Greensand Ridge rum, Bindon cider and Shepard Neem stout.
00:58 We then cook the puddings with the excess solar power off of one of our buildings and
01:03 all the packaging is recyclable.
01:06 My whole ethos at Fraser's is short supply chains using local produce prepared on site.
01:12 Now what actually goes into making a Christmas pudding?
01:16 Well, first you have to soak all the fruit in your preferred alcoholic beverage, most
01:21 likely brandy or cognac, and let it soak for a while.
01:24 Then once ready, mix with flour and eggs and transfer to bowls for your preferred size.
01:30 Then the puddings have to be put in the oven for a whole ten hours before they can come
01:33 out, be cooled and packaged for sale.
01:36 What's the demand like for Christmas puddings around this time of year?
01:39 I guess it's very high.
01:40 Massive, absolutely massive, loads.
01:41 I couldn't even quantify a number to how many I've done or sheer weight of volume I've done.
01:48 I think I'm pushing a thousand kilos this year, so close to a thousand kilos this year.
01:54 I did 800 plus last year, so quite high demand, yeah.
02:00 Now I just had to try some for myself.
02:04 Well here I am at Fraser's in Edgerton and I'm trying their award-winning Christmas pudding.
02:11 It's got a recipe that's been passed around throughout generations of the Fraser family.
02:21 And it does not disappoint.
02:22 It's got a beautiful taste that's making me look forward to Christmas even more.
02:26 Well don't be intimidated by the process at Fraser's.
02:29 You too can make your own puddings right at home.
02:32 And while the chefs didn't want to share their generational recipe with me, just know that
02:36 making a pudding isn't quite as hard as it looks.
