00:00 My name is Holly Bell, I'm a recipe writer and I blog at recipes from a normal mum.
00:04 And today I'm in the Scoff kitchen for my Keep Calm and Bake series.
00:07 But we're not baking today.
00:09 Instead, we're going to make a chocolate biscuit fridge cake in the shape of a Christmas pudding.
00:14 It's for anyone who doesn't like the real thing.
00:25 First thing to do is to soak our raisins.
00:28 You can use sultanas, whatever you've got.
00:30 I'm just going to pop some brandy into the saucepan.
00:32 Gently heat that.
00:34 And it just needs two to three minutes on the heat and it will all go in.
00:38 Plump up those raisins and then they'll be ready for adding to our biscuit cake.
00:43 Okay, so those raisins, you can see there that the brandy has been all sucked up into
00:47 them and they're really plump and lovely.
00:49 They're quite warm.
00:50 So I'm just going to leave those on the side here to cool a bit.
00:54 And I've got some melted butter here.
00:56 And I've also got some melted dark chocolate.
00:58 So I'm going to add those together.
01:01 A little bit of maple syrup in there as well, just to add that bit of sweetness.
01:08 And then I've got some cinnamon and some nutmeg.
01:12 Orange zest is really lovely in it.
01:15 Just be careful you don't get the pith in.
01:17 That's really bitter and doesn't taste nice at all.
01:20 Give that a little stir just to mix it all up.
01:23 I've got digestive biscuits here, but you don't have to use those.
01:26 Whatever you've got in the cupboard you could use a variety.
01:28 You know how at the bottom of a biscuit barrel you often have loads of little bits all just
01:32 broken up?
01:33 That's a great way to use them up is in this recipe.
01:36 Hazelnuts, because I really like them.
01:37 They're toasted, but you don't have to have them toasted.
01:40 You could use, again, you could just use whatever you've got.
01:43 I've got just a few cherries and then I've got these brandied raisins.
01:51 So just add those in there.
01:54 Now on the brandy front, I know that a lot of people might be thinking, goodness me,
01:58 you give brandy to children.
01:59 If you heat it for long enough then the alcohol does burn off.
02:02 You could just use a little bit of orange juice instead.

02:24 And then the last job is to take, I've got these two pudding basins here and I've lined
02:31 them just with cling film a few times.
02:33 And then all you do is just spoon it in.
02:36 This will last a couple of weeks because there's nothing in it that's going to go off, especially
02:41 if you keep it in the fridge, it will be absolutely fine.
02:44 So the last job to do is to take the cling film and press it over the top just to get,
02:50 you want a base that's completely flat so that when we tip these out later they will
02:54 sit really nicely on a plate.
02:56 And then the same with this one.
02:58 So those two are now ready to go in the fridge.

03:08 This has been in the fridge for well over an hour.
03:11 If you want to leave it overnight that's absolutely fine.
03:13 All we have to do now is sort of take it out of the tub.
03:16 So that's fallen out really easily, but if it doesn't just give it a little tap.
03:20 Undo the cling film and then pop it onto your serving platter upside down like that.
03:28 So I've got some white chocolate here that's been melted.
03:31 I've done that in the microwave, ten second blast.
03:33 Just be careful because white chocolate burns really, really easily.
03:36 I'm just going to pop some of this on the top and then what I want to do is make it
03:40 look a little bit like it's almost the brandy butter.
03:44 You sometimes see this in pictures on old fashioned Christmas cards.
03:48 I've got here, this is just red fondant and I'm going to make this look like little holly
03:55 berries.
03:56 One just there and then one last one.

04:02 And then last but not least, just some real holly leaves.
04:05 I'm just going to pop those like that and one more there.
