Samosa, vegetable rolls and papri chaat are popular snacks in Pakistan. Perhaps its biggest secret ingredient is its crunchy crust and people love to have it with every iftar during Ramzan.

My name is Mohsin Bhatti and I consumer activist, investigative journalist, food researcher and analyst. Today, I will reveal the commercial making of samosa patti sheets, spring roll sheets and crunchy papri. The unhygienic environment and poor quality controls lead to a contaminated product that can be very unhealthy for you and your loved ones.

Several small units have opened over the last decade that make and sell samosa roll patti. On the average four to five people are involved in the process of making this dough. These workers wear unwashed uniforms and extremely ugly footwear. There are no cleaning protocols followed at workplace.

First, one person makes fine wheat flour, salt and water into a dough. The dough rolls are stacked in layers and get directly exposed to insects or creepers on the floor. Will you ever eat samosa or vegetable rolls made with such patti?

This dough is then kneaded and flattened by another person. The diameter of this flattened samosa roll patti sheet extends to shoulder of workers wearing no shirt. This brings all sweat and body germs mixed with the samosa patti.

Then a third individual adds a layer of low quality oil and hands the flatbread over to a fourth person, who spreads the dough onto a large pan so it can cook lightly on either side. Extreme heat and sweat makes this product more unhealthier.

Then another helper cuts the pastry into appropriate sizes and additional cuttings are thrown on the floor. The appropriate sized sheets are used for samosa and spring or vegetable rolls making wile all leftover cutting is packed to get sold for papri.

The purpose of this video is to give you awareness. You and your family deserve a healthy hygienic eating. Please do some effort and make samosa patti, papdi or spring rolls sheet at home.
