00:01 Hi, I am Anupama and I welcome you to Sanjeev Kapoor Khasana.
00:11 And a warm welcome to our series of cooking for beginners.
00:14 Let's make a quick pasta.
00:15 Pasta is something which you want to have on the go.
00:18 You can make pasta, pack it up in a different box,
00:20 take it to your work place, have it on your way to work.
00:23 Or you can make it on any single day.
00:25 According to me, it's feel good food.
00:27 And the recipe that I am going to show you right now is a quick recipe
00:30 which can be made in about minutes.
00:33 Say about 7 minutes and this pasta would be done.
00:35 All you need to do is, you need good amount of boiled pasta at home.
00:39 Pasta is something that can be boiled and refrigerated for good 3 days.
00:42 So, boiled pasta take lot of water in a pan.
00:45 Once the water comes to a boil, add salt and oil to it.
00:48 Add in the pasta, the dry pasta.
00:50 And once it starts boiling, just check.
00:53 Once the pasta is cooked, it will go absolutely soft.
00:56 Drain it off and cool it.
00:58 Apply some oil and put it in the refrigerator.
01:00 Whenever you want to make pasta, just take some out of it and make.
01:03 This is how I have some boiled pasta with me.
01:05 And what I have here with me is tomato concase.
01:08 This is tomatoes. What I have done is,
01:10 the tomatoes that you get, nice plump red tomatoes,
01:13 just core them, remove the eye of the tomato and throw them in boiling water.
01:17 So, when you put them in boiling water, the skin automatically comes off.
01:20 So, get it out of the water after a minute.
01:22 And you just peel off the skin and squeeze out the juice from the tomatoes.
01:27 So, whatever pulp that you have in your hands,
01:29 chop it up finely and this is how it looks.
01:31 So, to make this pasta, what all do we need?
01:33 We need olive oil.
01:35 We need chopped parsley, salt, red chilli flakes, tomato concase,
01:39 chopped garlic, sliced onion and boiled pasta.
01:42 OK, so I have a wok which is hot, in which I'm adding some olive oil.
01:47 The oil is hot.
01:49 Let's add some garlic, a little more of it.
01:52 Do not brown the garlic, just lightly saute.
01:55 As I said, 7 minute pasta, this will be done within 7 minutes.
01:59 Once the garlic is sauteed, we'll add onions.
02:02 Add lot of onions.
02:03 It also gives moisture and slight sweetness to the pasta,
02:07 because tomatoes are sour and tangy and onions are sweet.
02:10 So, the combination is perfect.
02:12 It balances out all the sourness from the tomato.
02:18 Just saute the onions till it goes transparent or translucent.
02:22 Don't brown them, because in Italian cooking,
02:25 you don't really need to cook and cook and cook like you would do for an Indian curry.
02:29 So, here we just need to saute this.
02:32 So, here it is.
02:33 The onions are sauteed.
02:34 Now, to which we'll add some chilli flakes.
02:37 I like pasta to be slightly spicy.
02:39 So, chilli flakes is something that you should actually add when your pasta is ready.
02:43 Just top it up with it.
02:44 But why not add it while you're sauteing the onions?
02:47 That's also a way of making this dish.
02:49 So, after you've sauteed the red chilli flakes,
02:53 now let's add in the tomatoes.
02:56 And along with the tomatoes would go in salt.
03:01 After you have added the tomatoes,
03:04 cover this and cook for about a minute and a half.
03:06 It's very important for the onions and the tomatoes to cook together.
03:10 And this is what will be the sauce for the pasta.
03:13 It's not a very saucy preparation.
03:15 It's quite coating.
03:16 So, you'll find the pasta and the onion and the tomato mixed together.
03:20 You'll have it in a dish.
03:22 So, this is not a very saucy preparation.
03:25 It's something very quick,
03:26 especially when you have to carry pasta in a tiffin box.
03:28 It's always better to have it like a coating sauce and not very runny.
03:32 So, this is how it will be.
03:34 OK, so the tomatoes, onion and everything is cooked well.
03:38 Let's add in the pasta.
03:41 And some salt also.
03:44 And let's add some chopped parsley.
03:47 Lovely. All you have to do now is mix.
03:52 That's it.
03:56 Cheese is something that's optional.
03:57 If you want to add, you could add some processed cheese right away.
04:01 And that's it.
04:02 Looks very pretty.
04:03 What I would do is I would still cook this covered for one minute
04:08 because I want the pasta to go slightly soft.
04:11 This is a very simple recipe and I wouldn't call it authentic Italian recipe.
04:15 This is something that will give you a feel of a good pasta recipe at home
04:20 with some Italian ingredients like olive oil, red chilli flakes.
04:24 You could also add some herbs to this.
04:26 But all in all, it's quite a wholesome food.

04:41 Some parsley on top as garnish.
