Crispy Mozzarella Sticks

00:00 What's up guys, today I'm going to show you how to make some crispy mozzarella sticks.
00:16 So first up, we're going to cut up our low moisture mozzarella into large rectangle sticks
00:20 and try to keep them relatively the same size, otherwise they will fry up unevenly.
00:36 Alright so once you're done cutting up all your mozzarella, it's time to make all of
00:40 our breading ingredients.
00:42 So first up, we're going to crack an egg into a small mixing bowl with some whole milk,
00:46 a pinch of salt, some freshly cracked black pepper, and then just give this a really good
00:52 whisk.
00:53 Next, you're going to add some flour, semolina or cornmeal, chili flakes, some dried chervil,
00:58 some chili powder, and some freshly chopped rosemary to a small mixing bowl, and then
01:03 just give this a good mix as well.
01:16 Alright so once your breading station is ready to go, you're going to drop the mozzarella
01:20 sticks straight into the egg mixture and give it a good coating.
01:23 Then you're going to dredge them into the seasoned flour, then back into the egg mixture
01:27 and finally give a healthy coating of dried breadcrumbs.
01:31 Now as far as breadcrumbs go, most grocery stores will have some sort of variety of dried
01:36 breadcrumbs, panko being the most popular, but if not, just stick some fresh bread in
01:41 a food processor, throw it onto a baking tray and into a 250 degree oven for about 20 minutes
01:47 and you'll have some beautiful, fresh dried breadcrumbs.
02:03 Now that all of your mozzarella sticks are breaded, get a pot halfway filled with some
02:07 canola oil and bring it up to about 325 degrees Fahrenheit.
02:11 Drop your first batch of mozzarella sticks in and fry for about 2 minutes, just until
02:16 they turn beautifully golden brown.
02:19 Then pull them out and rest them on a few dry paper towels just to blot off any of that
02:23 extra oil.
02:25 And that's it guys, just whip up your favorite dipping sauce, whether it be marinara, some
02:29 sort of herb aioli, and enjoy some insanely delicious crispy mozzarella sticks.
