Chicken Satay Sticks

MARINADE
¾ cup rich peanut butter
¾ cup coconut milk
4 spring onions, generally cleaved
3 cloves garlic, stripped
10 g ginger (10 g), stripped
2 new Serrano chilies, generally cleaved
1 teaspoon curry powder
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon salt
2 tablespoons soy sauce
1 lime, squeezed
8 boneless, skinless chicken thighs, diced
SAUCE
⅓ cup peanuts (50 g), cleaved
½ cup coconut milk (100 mL)

Readiness
In a food processor, mix the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth glue; this ought to make around 2 cups.
