00:01Hello everyone, welcome to Dare Lazy!
00:07Today we are going to show you how to prepare Aapam batter and how to cook Aapam in kadai
00:13Ingridients:
00:152 cup raw rice
00:17Raw rice Soaked in water for 3 hours
00:211 cup, 1 day old cooked rice
00:23Previous day cooked rice was kept in freezer. It was taken out when the raw rice was soaking.
00:31Hence, cooked rice will melt down, while the rice is soaking
00:351/4 tsp baking soda
00:37Salt to taste
00:393 tspn Sugar
00:41Let's prepare the batter now!
00:45In a mixer jar, soaked raw rice (after draining the water)
00:48 Cooked rice squeezing out excess water
00:51Add some leftover water from cooked rice
00:53Grind to fine paste
01:06In that jar add some required amount of salt
01:113 tsp sugar
01:131/4 tsp baking soda
01:16Grind this again in mixer grinder
01:18Let this batter ferment for 8 hours
01:21Transfer this batter into big container and make sure the batter only fills half the portion of the container
01:26Reason: The batter might overflow and spill if the container is small
01:29Also don't store this batter in refrigerator while fermenting, because it will cease to ferment
01:34The consistency should look something like shown in here
01:39After 8 hours in kitchen counter, this batter has fermented well
01:43Now, let's see how to make Aapam
01:47There is no need to apply oil if you are using non-sticky kadai
01:51In case of Iron or Indolium Kadai, it's better to season with some oil the previous day
01:56Once the Kadai is hot, pour in 1 1/2 ladle of batter
02:00Spread the batter as shown in here
02:17Apply some oil around the batter
02:20Close with the lid
02:24From start to finish cook in low fire
02:37You can tilt the kadai after few minutes as shown so that it will cook a littler faster on the sides
02:44Once the sides are crispy and the middle of the aapam is cooked completely
02:49It's now time to take the aapam out
03:08Before you start pouring batter for next aapam, spread oil as shown either with this equipment or with a piece of cloth
03:19Hope you would try and like this recipe.
