Fried Drumsticks: Ingredients for marination: Chicken drumsticks 6 Salt 1 tsp Red chili powder 1 tsp Cumin powder ½ tsp All spice 1 tsp Yogurt ¼ cup Lemon juice 2 tbsp Orange food color 1 pinch Ingredients for coating: Egg 1 Flour 1 cup Clarified butter for frying Breads crumbs as required Method: Mix all marination ingredients in a bowl. Then add chicken drumsticks, mix well and leave for 2 hours. Heat oil in a wok. Now coat chicken in flour then in egg and bread crumbs and fry them in oil till golden brown. Serve.
Daalcha: Ingredients: Mutton 400gm Clarified butter ¼ cup Red lentil 1/3 cup Bottle gourd 1 medium Salt 1 tsp Red chili powder 1 tsp Crushed red chili 1 tsp Turmeric ½ tsp All spice 2 tsp Cloves 4 Whole black pepper 6-8 Cinnamon 1 stick Curry leaves 1 Sliced onion 1 medium Finely cut ginger garlic 2 tsp Green chilies 4 Finely cut tomatoes 2-3 Ingredients for sizzling: Curry leaves few Clarified butter ¼ cup Finely cut garlic 2 cloves Whole red chilies 5-6 Cumin seeds 1 tsp Method: Heat clarified butter in a pan then adds whole spices, onion and cook well that onion turns golden brown. Then add ginger garlic, tomatoes, crushed red chilies, red chili powder, turmeric, salt, all spice and mutton and cook for 5 to 6 minutes. Now add red lentil, bottle gourd, 2 cups water then cover and cook till lentil, mutton and bottle gourd get tender. Now mash bottle gourd with the help of spoon. For sizzling heat clarified butter in a pan add garlic and whole red chilies and cook till garlic gets light brown. In last add cumin seeds and curry leaves. Now pour this sizzling over Daalcha also add green chilies and serve.
Balti Achari Murgh:
Ingredients: Boneless Chicken (julienned) 2 cups Oil ¼ cups Dried Red Chilies 1 tbsp Ginger Garlic 1 tbsp Chili Powder 1 tsp heaped Achari Masala 2 tbsp Coriander Leaves 2 tbsp Green Chilies Chopped 2 All Spice ½ tsp Turmeric ¼ tsp Salt 1 tsp leveled Water 1 cup Kalongi 1 tsp Fenugreek Seeds ½ tsp Mustard Seeds 1 tsp Fennel Seeds 1 tsp
Method: Coarsely grind kalongi, meethi dana, rai dana and fennel seeds together. Now heat oil add dry red chilies then add ginger garlic, stir fry for 1 min. add coarsely ground spices, stir and fry for 1 min. add in chicken with chili powder, turmeric, salt and all spice. Fry for 10 min. lastly add Achari masala chopped cori
