Chicken mandi: Ingredients: Whole chicken 1 Mandi masala 2 tbsp Lemon juice 2 tbsp Oil ¾ cup For mandi masala: Curry leaves 2 Mace powder ½ tsp Ginger powder 1 tsp Black pepper 1-1/2 tsp Cloves 1 tsp For rice: Boiled rice ½ kg Chopped capsicum 1 Chopped carrot 1 Cardamom 6-7 Chicken stock 2 cup Clarified butter ½ cup Lemon juice 2 tbsp Mix garam masala 1 tbsp Mandi masala 1 tbsp For mandi chantey: Tomato 2 Green chili 2-3 Green coriander 4 tbsp Salt to taste Lemon juice as required Garlic 2 cloves Method: For making mandi chantey all ingredients pour in a blender and grind tickly then add lemon juice. for chicken mandimarinate whole chicken with mandi masala and leave overnight. Then bake in oven or grill and give coal smoke. Now heat oil add mix garam masala and cardamom then fry. Add mandi masala and also add chicken stock, lemon juice, chopped carrot and chopped capsicum and cook till it gets boil. Now mix boiled rice and put it on dum. Then take out rice in dish, put chicken over it and serve.
Basbousa: Ingredients: Semolina 250 gram Clarified butter ¾ cup Yogurt 200 gram Coconut powder 4 tbsp Baking powder 1-1/2 tsp Cream 1 packet Caster sugar 6 tbsp Almonds(cut) as required For sugar syrup: Water 1-1/4 cup Rose water 4 tbsp Caster sugar 250 gram Method: Mix semolina, caster sugar, yogurt, ghee, coconut powder, cream and baking powder in a bowl and leave for half an hour. Now in a grease pan spread the mixture now add almonds and bake on 180 degree for half an hour. When it gets light color remove from oven. For sugar syrup take water, rose water and caster sugar in a pan and cook. Now pour this on warm cake and cut cake in pieces.
