Khaowsuey: Ingredients for curry: Gram flour 1 cup Yogurt ½ kg Oil 2 tbsp Curry leaves 7-10 Cumin seeds 2 pinches Red button chilies 6-8 pieces Crushed red chilies 2 tbsp Red chili powder 2 tbsp Turmeric powder 1 tsp Salt to taste Ingredients for Chicken Gravy: Tomatoes ½ kg Boneless chicken 1 kg Red chili powder 2 tbsp Crushed cumin 1 tsp Salt to taste All spice powder 1/2 tbsp Boiled Noodles 1 packet Ingredients for Garnish: Coriander as required Mint leaves as required Chips as required Ginger julienned as required
Method: Heat oil in pan add curry leave, crushed red chilies, turmeric powder, crushed cumin, salt and whole red chilies fry well. Add In yogurt and gram flour mixture cook for1-1/2 hour. For chicken gravy heat oil in pan add chopped tomatoes. Add red chili powder, salt and crushed cumin cook for 10 minute. When it forms into paste add boneless chicken cook for 10 minute. Add all spice powder and left for simmer. Place boiled noodles in serving bowl. Add curry, garnish with green coriander, mint leaves, ginger and chips. Serve.
Koyla karahi: Ingredients: Mutton 1 kg Oil or butter 4-5 tbsp Ginger garlic paste 1tbsp Crushed red chilies 3 tsp Red chili powder 3 tsp Turmeric ½ tsp Tomatoes 5-7 Yogurt 1 cup Cumin powder 1 tsp All spice powder 1 tsp Green chilies 6-8 Coriander for garnish Ginger julienned for garnish Coal to smoke
Method: In a pan heat oil or butter adds ginger garlic paste and mutton sauté well. Add water cook for 10 minute. Add crushed red chili, red chili powder and turmeric powder cook. When meat is tender add yogurt and tomatoes. Add cumin cook for 15 minute. When little water left add green chilies, green coriander and all spice powder mix well. give smoke of coal, garnish with ginger.
