Mango Mint Raita:
Ingredients: Yogurt 250 gm Mango (cubed) 1 cup Mint (chopped) 1 tbsp Chaat masala ½ tsp Salt ½ tsp Sugar 1 tbsp
Method: Whisk yogurt, salt and sugar together. Then add mango cubes and mint, mix well. In the end sprinkle chaat masala and serve.
Fish Fry Masala:
Ingredients for Fish Marination: Fish ½ kg Paprika powder 1 tsp All spice powder ½ tsp Ginger garlic (crushed) 1 tbsp Yogurt 2 tbsp Rice flour 2 tbsp Oil for frying Coal for smoke For The Masala: Onion (chopped) 1 Green chili (chopped) 4-5 Tomato (boiled and chopped) 1 cup Carom 1 tsp Ginger garlic (crushed) 1 tbsp Salt, chili, turmeric as required Chaat masala 1 tsp Lemon juice 1 tbsp Butter 4 tbsp Oil 4 tbsp Onion rings for garnish Lemon slice for garnish
Method: Marinate fish with all the above ingredients for about 3-4 hours. Then fry in a hot oil. Then in a pan heat butter and oil, add onion, ginger garlic and green chili. Fry well. Now add salt, chili, turmeric and boiled chopped tomato. Cook well. Then add carom and lemon juice. Mix well. Now add fried fish and mix well. In the end place it in a dish and garnish with onion rings and lemon slice.
Corn and Capsicum Pulao :
Ingredients: Sweet corn ¾ cup Capsicum (chopped) ¾ cup Ginger garlic (crushed) 1 tbsp Onion (chopped) 1 Mix all spice 1 tbsp Butter 2 tbsp Yogurt ½ cup Fennel seeds powder 1 tsp Nutmeg, mace powder ½ tsp Salt as taste Chicken stock 1 cup Bay leaf 1 Rice (boiled) 3 cup Oil ½ cup
Method: Heat oil add onion, ginger garlic and all spice. Fry well. Then add yogurt, fennel seeds powder and salt. Cook well. Then add chicken stock, nutmeg, mace powder and boiled rice. Mix well. Now cover and cook well. Then heat butter and fry capsicum and sweet corn. In the end mix with rice and cook for another 2 minutes. Serve hot.
