This recipe offers the most popular—not to mention, tastiest—volcano in the world! This dessert is the real deal and there's no way any self-respecting chocoholic will be able to resist the chocolate brownie cake and the rich chocolate ganache that unite to create a luxurious culinary treat with a creamy core.

You'll Need:

For the brownie:

- 12⅓ oz melted butter
- 12⅓ oz sugar
- 3 oz cocoa
- 12⅔ oz flour
- 6 eggs
- 5⅔ oz dark chocolate couverture 
- 1 tsp baking powder
- 3 tsp vanilla extract
- 1 pinch of salt
- 7 oz white chocolate, chopped

For the chocolate decoration:

- 7 oz dark chocolate couverture, melted 

For the ganache:

- 7 oz milk chocolate couverture, melted
- 3 oz dark chocolate couverture, melted
- 3½ fl oz cream

Here's How:

1. First prepare the brownie cake mix. Place all the ingredients in a large, but only half of the white chocolate. Stir everything together with a hand mixer until a smooth batter is formed.

2. Pour the batter in a deep baking pan (10 x 15-inch diameter) lined with parchment paper and smooth it out. Sprinkle the rest of the white chocolate over the top.

3. Bake the brownies for 25 minutes at 350°F. Let them cool down after removing the pan from the oven.

4. You will now need two round, different sized cookie cutters, (e.g. 2 inch and 4½ inch in diameter). Take the larger cookie cutter and carve out 6 molds in the dough. Remove the dough from around the 6 mini cakes. Push the smaller cookie cutter into the center of each cake and remove the core you just created. In the end, the cakes should look like small donuts.

5. For the chocolate decoction, pour the melted dark chocolate couverture on a sheet of aluminum foil and smooth it out with a spatula. Let the chocolate cool.

6. Using a third round cookie cutter with a diameter slightly larger than the cakes, cut out 6 chocolate tops and lay each one on top of a mini cake.

7. Prepare the ganache by stirring together the melted chocolate and cream. While the ganache is still hot, pour ⅙ of the chocolate cream over each lava cake and enjoy the "chocolate crater" effect it will have on the desserts.

Incidentally, the practical thing about this mini volcano is that it only "erupts" in the mouth. Such a chocolate explosion of flavor can not be imitated by any other dessert. The only downside to this rich treat is that you may not be able to eat it in one fell swoop, but we wouldn't exactly call that a problem.
