How To Line A Tart Tin | Good Housekeeping UK

1. Lightly flour work surface and rolling pin. Roll out chilled dough to a circle, making regular quarter turns of dough so that it rolls out evenly. The circle needs to be at least 5cm (2in) wider than tart tin.

2. Roll dough on to rolling pin, then unroll it over tin, covering it completely with an even overhang all round.

3. Lift overhanging dough with one hand whilst pressing it gently but firmly into base and side of tin. Don't stretch dough whilst pressing down otherwise pastry will shrink during baking.

4. Take some excess pastry rolled into a ball and use this to press dough into side. This prevents your fingers poking holes in pastry and keeps surface even.

5. Roll rolling pin firmly over top of tin, to neatly press off overhanging dough, leaving neat, even sides. Save excess dough for later use.
