Make realistic chocolate leaves and perfect chocolate curls with this step-by-step video

1. To make chocolate curls, take a block of chocolate of your choice. Make sure chocolate isn’t too cold otherwise it will be too brittle to make curls. Put flat side up, on a board. Drag edge of a palette knife firmly across surface of chocolate, from top end of block to bottom. curls will come away in tight rolls.

2. For chocolate leaves, use a small pastry or paint brush to paint a generous layer of melted chocolate on to one side of leaf, spreading to edges but making sure not to get any on other side of leaf. Make sure leaves are chemical free, clean and thoroughly dry. Mint, bay and rose leaves are all good options. underside is where stronger pattern and texture is and will give more defined veining on chocolate leaves.

3. Lay leaves on to a tray greased and lined with baking parchment, and leave to set.

4. Once set, very carefully peel away leaf from chocolate. Holding stem will help to ease leaf away.
