Mexican Day of the Dead Bread

2 months ago39 views

This bread is traditionally made only around November 1st,, when we celebrate Day of the Dead in Mexico, a celebration when we remember and honor does who have passed away.
Ingredients for the bread:
3 ½ cups flour
¾ de cups white sugar
1 teaspoon salt
½ teaspoon orange blossom extract
1 1/3 de tablespoons fresh yeast
1 cup butter
2 eggs
2 tablespoons orange zest
½ cup orange juice
1 orange extract
Ingredients to decorate:
1 egg
½ cup melted butter
1 ½ cups white sugar
Parchment paper
Vegetable shortening
Preparation: 120 minutes
Serves: 8 people

Preparation:
Make a volcano with the flour on the table. Put the sugar, salt, orange blossom extract, yeast, butter cut into small cubes and eggs in the center of the volcano. Incorporate with the tip of your fingers.
Add 2 tablespoons of orange zest, half a cup of the orange juice and orange extract. Integrate with your hands until you obtain a uniform dough, continue working the dough until it easily comes off the table, this can take 20 to 40 minutes. If it is still sticky after 20 minutes you can add a little more flour.
Put the dough inside a bowl greased with oil, cover with a wet rag and let sit in a wam place until it doubles its size, approximately 1 hour.
Divide the dough in 8 equal portions. Cut one fourth of each portion to make the decorations. Work the rest of the portions rolling into balls. Put the balls over a cookie tray covered with parchment paper greased with shortening to prevent them from sticking to the tray, lightly press the balls.
Take each of the parts you saved for the decorations and roll into sticks, fold each in half and cut little ball from the fold and save. Take the stick and roll with your hands, pressing with your fingers as you move back and forth to create little backbones, Put two strips of “backbones” crossed over each ball of dough and put the ball on top using a little water to make it stick.
Let sit covered with a with rag for 30 minutes. Varnish with beaten egg. Bake in preheated oven at 350°F (175°C) for 30 minutes or until golden brown. Remove from the oven and let cool.
Varnish with melted butter and sprinkle with sugar to decorate.
