How to Cook Roast Chicken Bush Style

How to cook ROAST CHICKEN over a bush campfire. Christina diced a whole onion and then stuffed it all inside the chicken, once the roasting was finished this really gave it a nice flavour. We hope you enjoy our roast chicken camping video. \r

We chose not to follow regular walking trails and instead we hiked over 7km up a river. With dense bush on both river banks most of this distance was covered with our feet in the water. River hikes can be very memorable. I was hoping to catch a large Euastacus crayfish on this trip but with no luck, instead we did find that funky little cave you see at the end. \r
Our campsite is located next to the river. Ideally we would camp slightly further away from the river but the bush was too dense. If you do camp close to a river avoid using any soaps or detergent to wash your cook sets, the soap can run off into the river and kill vulnerable marine life. I hate carrying soap when we backpack cause it feels very wasteful, you can always boil your camp cookware and cutlery to sterilise any beria that might be present. We carry cleaning alcohol to sterilise our hands.\r

SMOKE FREE FIRE TIPS\r
Note that there are many holes in the rock wall of this video. When creating a rock wall behind the fire try filling all gaps with dirt and smaller stones. This will stop wind from blowing through and the smoke will be forced upwards. At times we had to switch the camera off cause the fire was getting too smoky. Its also advisable to construct the rock wall slightly higher. Another trick is to burn the fire for an hour or so beforehand to let the ground dry completely. You can also reduce smoke by removing the bark from your firewood. \r
