00:03Happy Saturday everybody! I am up making scrambled eggs with cheese in them for me and my wife and
00:08this morning we're going to use this Wagner Ware vintage chef skillet. It's a beautiful skillet,
00:13got a couple years ago and is one of my absolute favorites. Pretty much as smooth as glass. So
00:20we're going to get started on these scrambled eggs. I'm heating over medium heat and one trick
00:28that I've learned with making scrambled eggs, it's probably not necessary in this pan but I wanted
00:32to show you if sometimes if you take just a drop of oil, just a drop, okay and give that
00:39pan just a
00:40light oil, you know it's barely almost any in there but just a light oiling before you put your butter
00:48in. Sometimes it does make a difference in whether or not you get sticking but more of a reason for
00:55not to stick is using the right temperature and enough fat. So here we go, all right.
01:09I'm not going to use a ton of butter this time, just enough to get the job done.
01:17I'm going to get my sides. All right and that should do it.
01:32And the eggs go in, nice and slow.
01:43All right, once the eggs are in, I'm going to add a handful of cheese. This is sharp cheddar.
01:55And my new favorite tool for cooking in cast iron is a silicone spatula. I love it.
02:03So we're going to just go gently start moving the eggs around.

03:01good. Patrick is my 14 year old son and we are getting ready to go work in the
03:11yard for a little bit. Is that gonna be fun? Yes.
03:22Alright, these are doing really well.
03:40The thing about my wife is she likes her eggs a little bit more done than I do. So that
03:46is a point of contention in our marriage. Trying to get her to come around but doesn't look
03:52like it's gonna happen. So I will have to hit these eggs somewhere in the middle of what
03:57I like and what she likes. But you can see that these eggs are not sticking at all. Let's
04:08get the oven mitt to slide them around a little bit. That's nice. See that's about where I
04:17like my eggs but she will not eat them like that so we have to keep going. Patrick on the
04:24other hand does not like eggs at all. I don't know what his problem is but that's the only
04:31time when I doubt that he's my son. He's sitting here smiling. So I have successfully cooked
04:41scrambled cheese eggs in this vintage Wagnerware skillet with absolutely no sticking. And once
04:50again it's all about using the right heat with the right amount of oil. You don't necessarily
04:55need a smooth pan to do this. You know you can do this in just about anything. It doesn't matter.
