Black Quinoa Salad w Anne-Marie | Madeleine Shaw | Wild Dish

Madeleine shares with us one of her favourite quinoa salad recipes made with delicious roasted vegetables and a homemade turmeric dressing.

RECIPE
INGREDIENTS:
200G OF BLACK QUINOA
2 TBSP OF AVOCADO OIL OR COCONUT
1 RED ONION, QUARTERED
1 RED PEPPER, CUT INTO THIN STRIPS
1 SWEET POTATO, CUBED
1 COURGETTE, CHOPPED INTO INCH CHUNK
1 TBSP OF FRESHLY CHOPPED ROSEMARY
1 TSP OF CAYENNE
4 CLOVES OF GARLIC
SEA SALT
 
TURMERIC DRESSING:
3 TBSP OF OLIVE OIL
1 TBSP OF LEMON JUICE
1 TSP OF HONEY
1 TSP OF MUSTARD
¼ TSP OF TURMERIC
PINCH OF SALT
 
TOPPING:
2 TBSP OF GOJI BERRIES
2 TBSP OF TOASTED PUMPKIN SEEDS
METHOD
PREHEAT THE OVEN 200 C.
 
PLACE THE VEGETABLES IN A BOWL AND RUB WITH AVOCADO OIL, ROSEMARY, CAYENNE AND A PINCH OF SALT. ROAST IN THE OVEN FOR 40 MINUTES UNTIL COOKED SOFT AND GOLDEN.
 
COVER THE QUINOA WITH WATER AND A PINCH OF SALT, BRING TO THE BOIL THEN COOK FOR 12-15 MINUTES UNTIL THE WATER IS ABSORBED AND THE QUINOA COOKED THROUGH.
 
MIX THE QUINOA AND ROASTED VEGETABLES TOGETHER AND PLATE.
 
MIX THE DRESSING INGREDIENTS TOGETHER AND DRIZZLE OVER THE ROAST VEG AND QUINOA SALAD.
 
TOP WITH THE GOJI BERRIES AND TOASTED PUMPKIN SEEDS.
