How To Make Parsley Baked Chicken

The ingredients for the Baked Chicken Recipe are:
2 Handful Chopped Fresh Parsley
6 Cloves Of Garlic
10 Cashew
1 Tsp Of Oregano Leaves
Zest Of 1/2 Lemon
2 Tsp Freshly Squeezed Lemon Juice
1/4 Cup Of Olive Oil
Pepper
Salt
A Dollop Of Butter
1/2 Dozen Chicken Legs
10 Cherry Tomatoes
Carrots
Arugula Leaves

The method to cook the perfect Baked Chicken is:

Marination-
Grind the parsley leaves, garlic, cashew, oregano leaves, lemon zest, lemon juice, olive oil, pepper and salt in a mixie.
The marinade does not necessarily have to be a paste and you can leave it slightly coarse for a better taste.

The Chicken-
Take the chicken legs and keep the skin on to have the natural fats oils released into the chicken for an amazing flavour and at the same time keep the chicken moist.
Cut the chicken leg at the joint which will give you two pieces, make some cuts into them to help the marinade go deep and make the chicken more flavourful.
Mix marinade paste with chicken pieces and put it in the refrigerator for 3 hours.
Use cherry tomatoes as the centrepiece and put the chicken around the tomatoes.
Spread some sliced carrots on the chicken and sprinkle salt, pepper with a drizzle of a little olive oil on tomatoes and carrots.
Add in a dollop of butter
Place the chicken in the oven for 25-30 minutes which has been pre-heated at 190 degrees.
Add the arugula leaves on the sides and swirl it with the chicken juices.
Plate the chicken and serve it.
