Sandwiches are always a bliss specially for mothers who can assemble it anytime with little tweak and make a variety of them for their little ones. Watch Anushruti's version of Paneer Bhurji Sandwich that will surely leave your kid wanting for more.

You can use the paneer bhurji filling even with rotis and wraps, when you don’t have bread on hand.

Ingredients: (Serves 4)
2 tbsp oil
1 tbsp freshly grated ginger
2 green chilies, chopped (more if you are making for adults)
½ tsp hing
2 tomatoes, chopped
3 tbsp fresh mint leaves (or pudina), finely chopped
500 gm paneer, crumbled
1 to 1 ½ tsp kala namak or regular salt

Whole wheat bread slices
Butter
Lettuce leaves

Method:

In a wok, put in the oil and once its hot, stir in the freshly grated ginger. Once it sizzles, put in the chilies, hing and the tomatoes. Cook the tomatoes for about 3 to 4 minutes or until they are soft.

Once the tomatoes are soft, stir in the mint leaves and the crumbled paneer. Cook for a few more minutes until the paneer absorbs all the flavours of the spices. Mix in the salt and allow to cool a little.

Place a lettuce over a slice of buttered bread and spoon some filling over it. Place another slice of buttered bread over the filling to cover the sandwich.
