This recipe for Banana Nut Bread Muffins is incredibly good, delicious and easy! Great for any holiday family breakfast!

Servings: 12 Muffins
Time: 30 min

Here’s what you’ll need to get started:

Ingredients For Muffin Batter:

1 1/2 cup Flour
1/2 cup Sugar
1/2 tblspn Baking Powder
1/4 tspn Baking Soda
1/2 tspn Salt
1/2 cup Milk
1/4 cup Vegetable Oil
1 egg
4 oz. Apple Sauce
1/2 Over Ripe Banana (Smashed)
1/4 cup Chopped Pecans
1 tblspn Molasses

Directions:

Heat up your oven at 375 Degrees.

Spray your muffin pans with non-stick spray. I prefer Pam Baking Spray when baking muffins or cakes.

In a medium bowl and mix your dry ingredients together: flour, sugar, baking powder, baking soda, salt and cinnamon.

Next in separate small bowl add and mix your wet ingredients together: milk, vegetable oil, egg and applesauce

Then pour add your wet ingredients to your dry ingredients and mix together until you have a smooth batter

Now add in your mashed 1/2 banana and mix thoroughly into your batter

Next mix in your molasses and chopped pecans

Once done spoon in your batter into your muffin pans, each muffin mold should be filled about half way. Set your muffin pans aside to prepare for making your crumb topping

Ingredients For Crumb Topping:

1/4 cup Flour
1/4 cup Sugar
2 tblspn Butter (Melted)

Directions:

In a small bowl mix together your flour and sugar

Add your melted butter and cut your butter through your flour and sugar mixture with a fork until you have small little balls or crumbs forming, see video for demonstration

Add enough crumb topping to cover your batter for each muffin
Place muffins in the oven and bake for 15 – 20 minutes
Let cool for 5 minutes and enjoy!!!
