To make chocolate mousse you will need: 4 eggs. 40 grams grams of butter. 175 grams of chocolate. 2 tablespoons of granulated sugar. And half a cup of heavy cream.
Melt the chocolate in a double boiler.
Be sure whisk the chocolate as it melts to get a nice smooth consistency.
In another bowl, mix the egg yolks and sugar together until the mixture becomes light and frothy.
Place the butter and chocolate in a bowl and microwave them together.
Pour this mixture onto the chocolate.
Whip the cream until it becomes thick.
Lighten the mixture by adding cream to the chocolate.
Stir until you get a nice even mixture.
Whisk the egg whites until they’re thick, and then add a pinch of salt and a few drops of lemon juice.
Add in one-third of the egg whites and mix them thoroughly.
Then, carefully add the rest of the mixture to the egg whites until it’s thoroughly mixed.
You can leave the mousse in a bowl or transfer it into ramequins.
Leave it in the fridge to cool for a few hours before serving.
