How to Prepare a Puff Pastry
Begin with 500 grams (or 1.1 pounds) of flour in a kneading bowl.
Add in 75 grams (or 2.6 ounces) of softened butter; you can soften it in the microwave.
Knead the flour and butter slowly for 30 seconds.
Then add 15 grams (or 0.5 ounces) of salt into a glass of water.
Pour the saltwater into the kneading bowl and slowly knead it into the dough for 15 seconds.
Thoroughly mix the ingredients together and then knead the dough for another minute.
Remove the dough from the bowl and shape it into a ball.
Use a knife to cut two lines into the dough.
Store it in an airtight container for about 2 hours.
Put 500 grams of butter between two sheets of cellophane.
Mash the butter.
Be sure to sprinkle the board with flour to prevent the pastry dough from sticking.
Spread the dough and shape it into a square.
Then add the 500 grams of mashed butter and fold the pastry dough over top.
Flatten the dough into another square, and then fold it into thirds.
Repeat this procedure to make sure that the butter and dough are well-mixed.
Put the dough back in the fridge for one hour.
Then spread it out and re-fold it, just like before.
Repeat this step 3 times.
Put the dough back in the fridge for an hour, and then spread it out again.
Fold it in thirds and repeat the process.
Let it cool in the fridge for another hour, and then it's done.
