The II V I is the most common jazz chord progression and it refers to the degrees of a diatonic scale.
As you may know a diatonic scale has 7 degrees or notes so we will be using the 2nd, the 5th and the root or 1st degree. In the C major tonality the chords would be Dm7, G7 and Cmaj7.
