Recipe to prepare "Ragda Puri":
1 bowl yellow peas/ragda, soaked overnight and boiled/pressure cooked
few puris (knead a hard dough of 1 kg wheat flour mixed with 100 gms semolina/rawa, cover with a wet cloth-piece for sometime, and then make small puris and deep-fry them)
1 bowl coriander-mint green chutney
1 bowl tamarind chutney
1 tsp chaat masala
1 tsp red chilli powder
1/2 bowl nylon sev, for garnishing
1/2 bowl finely chopped onion, for garnishing
few coriander leaves, for garnishing
1/2 bowl fried gram
1 tsp black salt
Take puris (one by one), and make a hole in the centre by pressing them with your thumb.
Put boiled yellow peas/ragda in the puris.
Add green chutney, tamarind chutney, chaat masala, red chilli powder, nylon sev, fried gram, onion, coriander leaves, and a little more ragda and nylon sev yet again.
Ragda Puri is ready to serve.
Note: Ragda puris are easily available in the market.
For Coriander-Mint Green Chutney:
Take a mixer/grinder, and grind together 1 medium bunch coriander leaves, 1 medium bunch mint leaves, 4 green chillies, 1 inch ginger and salt into a fine paste.
For Tamarind Chutney:
Take tamarind pulp, and add to it jaggery, little dry ginger powder, fennel seed powder and little red chilli powder.
Boil this mixture properly, and then strain it.
